Do you have trouble keeping the crispy crust on fried food?

Someone mentioned this a few days ago but I don't remember who it was nor the topic of the thread.

I have a favorite trick or two that might be worth trying, if you haven't already. First, make sure that your piece of meat or fish is patted dry. Then, dredge in seasoned flour or corn starch or a combo of the two.

Follow with a dip in an egg plus milk or buttermilk bath, then straight into your breading of choice. I like a flour/panko/cornmeal and favorite seasonings for seafood. The flour or cornstarch helps the breading to adhere.

Also, make sure the oil is hot enough to really sizzle.

Anyone else have hints to offer?
