2011 food preservation - what have you put up?
Comments (115)Hey, guys! Long time no post. I didn't have a very good year for tomatoes, which form the backbone of my canning season, so I've been feeling a bit bummed. By the time I realized I wasn't going to get enough to can all the tomato stuff I wanted for the year, it was too late to buy a bunch at a decent price. I did buy a few late ones at an exhorbitant price just to be sure I could put up some of everything, but I also caved and BOUGHT six jars of Classico sauce when it was on a great sale last week. Felt like I had to look both ways to be sure nobody spotted me, LOL! I did put up lots an lots of applesauce. I usually do some, but this year our usual local orchard was hit by hail in August, with the result that they had fewer first-quality apples and lots and lots of seconds at $5 for a half-bushel, so I'm on my second half-bushel of mixed seconds for sauce. HOWEVER, I've done more freezing of veggies than ever before---this is my first full harvest season since I got my FoodSaver vacuum sealer! I didn't count it all, but I put up - strawberries (some plain and some with a little local honey) - corn---LOTS! - sweet peppers---I bought a 3/4 bushel and roasted about half, sliced & froze the other half in raw strips - squash---winter squash is practically free around here by November, and we got three ENORMOUS ones a few weeks ago; these I just processed this weekend, so I can tell you that I froze - 12 cups of puree (two more cups in the fridge to use this week) - 12 cups of raw cubes - 4 cups of partially cooked cubes (I found different opinions on whether it should be cooked partially first, including on threads here, so I did some of each and will see what I think). Boy, there was a lot of orange in my kitchen by the end of the session! I also didn't have any zucchini/summer squash this year---usually I'm freezing oodles of zucchini bread for winter breakfasts---so now I'm working on filling what room is left in the freezer with other fruit quick breads. So far I've found a banana muffin recipe I really like, and am experimenting with various apple breads, coffee cakes, and muffins. I made some squash muffins, and they're not bad, but I think I can do better. That's all. Just wanted to pop in and say hi and tell y'all what I've been up to! Happy harvesting, Zabby P.S. Comments (40)Just catching up on this post - and noted I failed to answer bonicarose question about the granola bars. Yes - I use dried fruit - any that I happen to have available. One thing I noted - the bars are best made with dried granola (which I have for breakfast anyway), rather than the original recipes for using the oats as it comes from the box. The oat recipe turns the bars quite hard - whereas, if dried oats (as in granola) keeps the bars from baking too hard. Also don't pack the mixture in the pan too hard before baking. (Ye gads, learn something new everyday). My pantry is quite bare, with filled jars being replaced by many, many empty ones - mostly all my summer fruits in simple syrup - nectarine, apple, peach, pear, plum - now almost all gone (sob!). The freezer, tho - now that is different - it is so loaded that I can hardly squeeze any more in it. No snow - yet - (rain forcasted) - eating stir fries and lots of green salads. Planted quite a few onions and garlics that are coming along well. Never enough - and so must supplement cooking onions before the season is over. My chardonnay grapes arrived today (ordered in Dec) and now today's project is to get em in - hopefully will grow on a south-facing arbor - should be an ideal spot. Three other grapes - Thompson is one, the others shall remain nameless -are doing quite well - about 3 years old, and my first lesson on how to prune them (hope I didn't kill the poor things). Comments (9)sheesharee, you have a wonderful start to your tree. I hope you can find more blue ornies this yr, I know last year there were some stunning ones at Walmart, but don't worry they will be back, it takes time to get a bunch together, that is what makes it fun. If you have a Garden Ridge store near you check there, they have a giant selection of ornies. You are right about your tree, it is full and it takes a bunch of ornies to do a tree. One reason I love silk flowers in a tree is because it helps fill in the empty spaces. Michaels had a wonderful sale last weekend on silks, definately check there if you want to add in more. Tulle netting is also a beautiful "stuffer" in a tree. I got this photo from a christmas group I found a long time ago. Comments (22)Fun family Annie! I need to try ann_t's meat tort. I say that every year but it is on my list. We had some failures. Christmas day was dysfunctional family day. No one told me family was waiting...when we walked in and trying to settle after a long drive...yikes. I was hounded trying to un-pack...did not know so many people were there. And a sit down dinner was waiting. I had prepped so many sides but this and that niece and nephew had to eat by 5 and sister wanted all to be perfect...they started digging into my cheese and treat platters before i could pee. Horrible meal. I gave up and had a glass of wine. I had 6 cheeses and olives and ghost pepper salami and salmon charcuterie all prepped to platter but they dove into the containers before i could plate them...savages. My homemade flatbread was still in the truck yet to be unloaded. : ) (thought it was to be a quiet evening with my parents)...prep and eat around 7. My mother, now 86, tried to make a traditional turkey meal but it was so unnecessary. She cooks blonde. (not hair). Just safe and under done. The turkey was started 5am like the ye-olden days, Dressing bland and not baked fully, gravy white and floury. Sweet potatoes boiled in water to death. She stressed knowing i was on my way not knowing family showed up and waiting...(my sister that does not cook and expected miracles). The turkey sat 3 hours covered. How do they not know safe temp as i have taught them for years!? . I had all the fixings prepped to go into the oven but they were done well after all the family left. (did not know the extra family were even to be there). Family that does not cook and thinks those of us that do should provide for all. Grrr. "Almost forgot- Christmas apps were amazing! Crab cakes, mini lobster quesadillas, shaved filet mignon crostini and mini sliders." Yum! We had better successes the following days. : ) The best oyster stew ever. Finally perfected that one.
