Boil Washing Linen - left my pillowslips yellow

So my pillowslips were feeling really icky - like detergent residue in them. (I wash on hot and use 3 rinses; apparently I'm using too much detergent or something.) So I decided to try the boil wash. I put them in a canning pot with 1 cup of ammonia. Boiled for quite awhile (maybe 30 minutes?). Fished out with tongs into the washer. They were an orangy yellow color. I rinsed with hot, spun, then added some vinegar and rinsed again. Spun. They still looked quite ivory but I thought maybe they'd lighten up when they dried. I put them in the dryer for a few minutes until they were quite damp and then laid them out. When I lay them against my linen sheet, they are definitely a different color (they were exactly the same color when I started - they are a set). Ideas on why this happened and how do I get them back (short of bleaching, which Tricia says I should not bleach the linen, although I did bleach my pinafore on accident - it turned whiter, but is otherwise fine).
