Would you please share the actual recipe? I like all the ingredients in the dressing.

The recipe I use is what I call my basic vinaigrette...
The veggies are variable....but sweet onion and some sort or color of bell pepper are a must. When using carrots, I cut into buttons and briefly blanch in either boiling water or the micro. And I have learned that if adding black olives, add them just before serving as they can leave dark stains on other veggies and the pasta....and the same with red cabbage.
AND....just a bowlfull oif onions, cucumber, red and green peppers, broccoli, zucchini, halved cherry tomatoes, halved pea pods, carrots, celery etc dressed with a vinaigrette makes a beautiful and tasty salad. I often make it for a funeral lunch and have standing by a pound of cooked pasta and extra dressing. After I see how many people are there I may add some of the pasta, or all of it or quickly cook more pasta to stretch the veggies.

SALAD DRESSING

1T dijon
mustard

1 clove of garlic, crushed (or chopped
very fine)

1T honey

1/3 cup cider vinegar and balsamic vinegar,
mixed…mostly cider

Mix together, I use a wire whisk

1/2 cup olive oil...whisk the oil in a
slow stream, whisking all the while

Then I like to add some dried or fresh
herbs....most of the time I use oregano. About 2 tsps of dried....more if fresh.

Will be making this over the weekend, sans the macaroni because we are also having potato salad. I was looking for a good marinade that both my dad and SO would like. SO doesn't like sweet and sour tastes and dad loves it. This seems middle of the road enough to satisfy both of them! Plus me!

Since last spring, this has become my family's standard for all Macaroni salads, the only one they want. It was printed in the Boston Globe May 2009 and is from St Alphonzo's Kitchen, a small restaurant in the South End of Boston. GRANDMA SIS'S MACARONI SALAD - serves 8 INGREDIENTS I pound box of elbow macaroni 1 tablespoon vegetable oil 1/2 cup mayonnaise 1 tablespoon cider vinegar 1/2 tsp salt or to taste 1/2 tsp black pepper 1 small green bell pepper, seeded cored and cut into thin strips or chopped 1/2 red onion coarsely chopped 1 large ribs of celery, halved lengthwise and thinly sliced 1 jar (6-8 ounces) cocktail olives with pimiento, drained and chopped In large pot with boiling water cook the macaroni for 6-8 minutes or until it is tender but still has some bite. Drain the macaroni into a colander and shake to remove excess moisture. Transfer the pasta to a large bowl. Add the vetable oil Sire well and set aside to cool. In a small bowl, whick the mayonnaise, vinegar, salt and pepper. Stir the mixture into the pasta until it is coated all over. Add the bell pepper, red onion, celery and olives. Toss gently buth thoroughly. Taste for seasoning and add more salt and pepper if desired. Cover and chill for 1 hour before serving. Thanks Claire. After it was all put together and looking like we might be short of food, my thoughts were to make another batch but halving the recipe. That would get me right on target with your 1/2 cup portion size. Do you think that would be the thing to do or just make another full recipe and be done with it? No, we're not just serving macaroni salad! :-p It's a graduation party and we'll be serving pulled pork, salad, baked beans, and relish trays.

Well, I haven't found the macroni salad recipe but I did come up with a really good chick pea sandwich spread that I found at allrecipes.com, submitted by Carole. Mock Tuna Salad 1-19 oz can garbanzo beans, drained and mashed 2 T. mayonnaise 2 t. spicy mustard 1 T. sweet pickle relish 2 green onions, chopped salt and pepper to taste In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well. Teri's notes: I mashed the beans in the Cuisinart until creamy. Used about twice as much green onion. This makes a great sandwich spread with lettuce and a little more mayo on toast. Try not to expect tuna; it's not. But it's a wonderful sandwich spread.

Here is mine which is requested for many occasions. Sour Cream Macaroni Salad I have absolutely no recollection of where this recipe came from. I just know I have made it for years and years and get requests to bring it to gatherings. 1 8-oz package elbow macaroni (2 cups uncooked) 1/2 - 1 cup diced green pepper 1/4 - 1/2 cup sweet pickle relish 1 T grated onion 2 -3 red pimentos 1/2 cup mayonnaise (I use Miracle Whip for this salad; mayo does not taste right in the salad) 1/2 cup sour cream 1 1/2 t salt 1/4 cup milk Pepper to taste 2 hard boiled eggs, chopped Cherry tomatoes (Normally I do not put any tomatoes on the salad) Cook macaroni for 11-14 minutes or until tender. Rinse with cold water and drain. In a large bowl combine green pepper, pickle relish, onion, and pimentos; mix well. Add macaroni. In a small bowl, combine mayonnaise, sour cream, milk, salt and pepper and blend well. The dressing will seem thin at first. Pour over macaroni and mix well. Sprinkle chopped eggs on top.
