Would you please share the actual recipe? I like all the ingredients in the dressing.

Thanks!

The recipe I use is what I call my basic vinaigrette...
The veggies are variable....but sweet onion and some sort or color of bell pepper are a must. When using carrots, I cut into buttons and briefly blanch in either boiling water or the micro. And I have learned that if adding black olives, add them just before serving as they can leave dark stains on other veggies and the pasta....and the same with red cabbage.
AND....just a bowlfull oif onions, cucumber, red and green peppers, broccoli, zucchini, halved cherry tomatoes, halved pea pods, carrots, celery etc dressed with a vinaigrette makes a beautiful and tasty salad. I often make it for a funeral lunch and have standing by a pound of cooked pasta and extra dressing. After I see how many people are there I may add some of the pasta, or all of it or quickly cook more pasta to stretch the veggies.

SALAD DRESSING

1T dijon
mustard

1 clove of garlic, crushed (or chopped
very fine)

1T honey

1/3 cup cider vinegar and balsamic vinegar,
mixed…mostly cider

Mix together, I use a wire whisk

1/2 cup olive oil...whisk the oil in a
slow stream, whisking all the while

Then I like to add some dried or fresh
herbs....most of the time I use oregano. About 2 tsps of dried....more if fresh.

Will be making this over the weekend, sans the macaroni because we are also having potato salad. I was looking for a good marinade that both my dad and SO would like. SO doesn't like sweet and sour tastes and dad loves it. This seems middle of the road enough to satisfy both of them! Plus me!

Well, I haven't found the macroni salad recipe but I did come up with a really good chick pea sandwich spread that I found at allrecipes.com, submitted by Carole. Mock Tuna Salad 1-19 oz can garbanzo beans, drained and mashed 2 T. mayonnaise 2 t. spicy mustard 1 T. sweet pickle relish 2 green onions, chopped salt and pepper to taste In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well. Teri's notes: I mashed the beans in the Cuisinart until creamy. Used about twice as much green onion. This makes a great sandwich spread with lettuce and a little more mayo on toast. Try not to expect tuna; it's not. But it's a wonderful sandwich spread.

Here is mine which is requested for many occasions. Sour Cream Macaroni Salad I have absolutely no recollection of where this recipe came from. I just know I have made it for years and years and get requests to bring it to gatherings. 1 8-oz package elbow macaroni (2 cups uncooked) 1/2 - 1 cup diced green pepper 1/4 - 1/2 cup sweet pickle relish 1 T grated onion 2 -3 red pimentos 1/2 cup mayonnaise (I use Miracle Whip for this salad; mayo does not taste right in the salad) 1/2 cup sour cream 1 1/2 t salt 1/4 cup milk Pepper to taste 2 hard boiled eggs, chopped Cherry tomatoes (Normally I do not put any tomatoes on the salad) Cook macaroni for 11-14 minutes or until tender. Rinse with cold water and drain. In a large bowl combine green pepper, pickle relish, onion, and pimentos; mix well. Add macaroni. In a small bowl, combine mayonnaise, sour cream, milk, salt and pepper and blend well. The dressing will seem thin at first. Pour over macaroni and mix well. Sprinkle chopped eggs on top. Chill for several hours. Before serving, garnish with whole cherry tomatoes. Serves 6 - 8 This post was edited by walnutcreek on Tue, Jul 29, 14 at 14:45

Have had macaroni salad that I think was nothing but cooked elbows and some mayo?? SIL always makes a "tuna mac"... elbows, mayo and tuna... nothing else?? I like mine a little "wet" with some kinda zing. Like lots of thin sliced green/stuffed olives... tedious cutting, but like it. Like capers. If onion/celery... minced REALLY fine. Sometimes finely shredded carrots. Any kind of pasta will do. Real mayo (some store brands are just fine with me) and maybe a dab of... shudder... Miracle Whip?!? Now a "pasta salad" is no holds barred. Rachel Ray did something she called pizza-something. Pasta & stuff you'd find on a pizza... pepperoni, mushrooms, olives, onions, peppers, etc. She made a vinaigrette that was sort of tomato based. Can't remember recipe, off hand. If I'm doing a pasta salad, usually use onions, carrots, celery, peppers, broccoli, etc. I'll blanch the hard veggies (carrots & broccoli) for a minute or 2. Then let ALL veggies sorta marinate in whatever kind of vinaigrette I concoct... overnight, if I plan ahead. Have NO idea if true, but seems flavors get into HOT veggies better?? Where's Alton when ya need him?!?

Best macaroni salad?

After seeing this thread the other day, I decided to give Ree's macaroni salad a try. DH won't eat a macaroni/pasta salad that isn't mayonnaise based, so I'm a bit limited there. I made several substitutions and additions, because I didn't want to go shopping and used what I had in the pantry. And DH insisted on having peas and boiled eggs in it. Those are his "musts" for macaroni salad. We both loved the result. Obviously, I didn't have that specific pickle; instead, I used sweet pickle relish and some juice from escabeche I canned last summer. How's that for spicy? DH was also concerned that it didn't have mustard in it. He kept trying to get me to put ingredients in it that I used in my regular go to salad. I wanted different. The dressing Ree made accomplished that. He did suggest that I make it again and add shrimp to it. Sounds good to me. I rarely miss a Pioneer Woman episode, but must have missed that one. Thanks for guiding me to it.
