Apps and salt and huh? going into entertaining season

The salt watch has gotton extreme! I love the new governmental requirements, both for the health of the population, and because there were so many things that were way too salty for my palate it made eating out un-fun. It has gone to a different extreme, however! I'm not so fussed anymore with restaurant fare where they just removed the excess salt without retuning the flavor. That seems to be getting better. Now, they're just making unwarranted culinary mistakes!

Yesterday, I was served something called "spring rolls" which looked a lot more like small lumpia (and filled more like lumpia), and at first I thought it was just a random, familiar name because a lot of people don't know word one of filipino food. Nope! They were extraordinarily flaky, almost like filo, but not. Filo is generally brushed with oil or butter between layers, both to make it pliable and to add flavor. I imagine the butter users use salted butter, as well. When they cooled a bit, I was able to unwrap a single layer of one a bit, and found out why it was called what it was. It was rolled in many layers of rice paper! No wonder it tasted like nothing! The rice paper on a proper spring roll isn't tasty, but the point is it's so thin you can see all the delicious bounty inside, and ignore the taste of the rice paper as the rest tickle your tongue. These little things were opaque with so many layers, with little filling, which was beige (i.e., nothing to look at, though the filling tasted okay when not overwhelmed by a thick gob of rice paper), had no chance. BTW, lumpia wrappers are made from a thin batter of salted flour. Lumpia are delightful. Hey, we can make it out of unseasoned rice paper are not. If you cook without salt at all, you need to add some other kind of seasoning!

End cranky rant of the day...
