No help on macaroni salad, but in my husband's family sloppy joes must be accompanied by coleslaw which is placed on top of the sloppy joe.

I made this one and it was very good. I like a hint of sweet in mine so I added a pinch of sugar to the dressing mix.

Since last spring, this has become my family's standard for all Macaroni salads, the only one they want. It was printed in the Boston Globe May 2009 and is from St Alphonzo's Kitchen, a small restaurant in the South End of Boston. GRANDMA SIS'S MACARONI SALAD - serves 8 INGREDIENTS I pound box of elbow macaroni 1 tablespoon vegetable oil 1/2 cup mayonnaise 1 tablespoon cider vinegar 1/2 tsp salt or to taste 1/2 tsp black pepper 1 small green bell pepper, seeded cored and cut into thin strips or chopped 1/2 red onion coarsely chopped 1 large ribs of celery, halved lengthwise and thinly sliced 1 jar (6-8 ounces) cocktail olives with pimiento, drained and chopped In large pot with boiling water cook the macaroni for 6-8 minutes or until it is tender but still has some bite. Drain the macaroni into a colander and shake to remove excess moisture. Transfer the pasta to a large bowl. Add the vetable oil Sire well and set aside to cool. In a small bowl, whick the mayonnaise, vinegar, salt and pepper. Stir the mixture into the pasta until it is coated all over. Add the bell pepper, red onion, celery and olives. Toss gently buth thoroughly. Taste for seasoning and add more salt and pepper if desired. Cover and chill for 1 hour before serving. Personally, I found that there was enough salty taste and seasoning without adding any of the additional salt to the recipe. Fran

I'm making these this weekend, but I won't use all that garlic--maybe half. SPICY BAKED WINGS (Jo Cooks - Foodmaker) 3 dozen chicken wings 9 cloves of garlic, minced 1 tsp fresh grated ginger 2 tsp sesame oil 1/4 cup light soy sauce 2 tbsp rice wine vinegar 2 tbsp vegetable oil 2 tbsp hot sauce 1 1/2 tbsp brown sugar salt and pepper to taste chives for garnish Preheat oven to 425 F degrees. Line a baking sheet with aluminum foil or silpat. Salt and pepper the wings and then place them on the baking sheet. Bake them for 45 min to an hour depending on how crispy you want them. To make the vinaigrette, mix all remaining ingredients, minus the chives and whisk everything together. Pour the vinaigrette over the wings while they are hot and toss them around, making sure the wings soak up all the vinaigrette. Garnish with chives.

The recipe I use is what I call my basic vinaigrette... The veggies are variable....but sweet onion and some sort or color of bell pepper are a must. When using carrots, I cut into buttons and briefly blanch in either boiling water or the micro. And I have learned that if adding black olives, add them just before serving as they can leave dark stains on other veggies and the pasta....and the same with red cabbage. AND....just a bowlfull oif onions, cucumber, red and green peppers, broccoli, zucchini, halved cherry tomatoes, halved pea pods, carrots, celery etc dressed with a vinaigrette makes a beautiful and tasty salad. I often make it for a funeral lunch and have standing by a pound of cooked pasta and extra dressing. After I see how many people are there I may add some of the pasta, or all of it or quickly cook more pasta to stretch the veggies. SALAD DRESSING 1T dijon mustard 1 clove of garlic, crushed (or chopped very fine) 1T honey 1/3 cup cider vinegar and balsamic vinegar, mixed…mostly cider Mix together, I use a wire whisk 1/2 cup olive oil...whisk the oil in a slow stream, whisking all the while Then I like to add some dried or fresh herbs....most of the time I use oregano. About 2 tsps of dried....more if fresh.

I LOVE macaroni salad and make it very similar to the chicken salad I posted in another thread. Salad macaroni, chopped hard boiled egg, finely chopped celery, chopped black olives (for hubby) and thinly sliced green onion (i only use the green tops but the entired onion can be used). Because i dont care for a tangy macaroni salad, i dont use vinegar or pickle juice, just mayo, salt and pepper as the dressing. I lightly coat the macaroni with mayo because I don't like a gloppy salad, but this is also a matter of personal preference. Cooked bay shrimp is another ingredient I usually include, but they can be left out if desired. One thing about macaroni salad is that it's forgiving and one can pretty much add what they like and leave out what they don't like.

I have made this.. Very easy...Sounds like it might be too sweet but it really is not. You can adjust the amount of mayo.

Macaroni Salad
16 oz. cooked macaroni
2 cups mayonnaise
1/4 cup vinegar
1/4 cup sugar
1 can sweetened condensed milk
3 grated carrots
1 chopped onion
1 green pepper chopped.

Mix the mayo ,vinegar ,sugar and sweetened condensed milk together. Pour over macaroni. Stir to mix well. Fold in carrots, onion, and green pepper. Refrigerate 4 hours before serving.

1/2 tsp. salt
6 hard-cooked eggs, chopped (less may be used)

Here is mine which is requested for many occasions.

Sour Cream Macaroni Salad

I have absolutely no recollection of where this recipe came from. I just know I have made it for years and years and get requests to bring it to gatherings.

1 8-oz package elbow macaroni (2 cups uncooked)
1/2 - 1 cup diced green pepper
1/4 - 1/2 cup sweet pickle relish
1 T grated onion
2 -3 red pimentos

1/2 cup mayonnaise (I use Miracle Whip for this salad; mayo does not taste right in the salad)
1/2 cup sour cream
1 1/2 t salt
1/4 cup milk
Pepper to taste

2 hard boiled eggs, chopped
Cherry tomatoes (Normally I do not put any tomatoes on the salad)

Cook macaroni for 11-14 minutes or until tender. Rinse with cold water and drain.

In a large bowl combine green pepper, pickle relish, onion, and pimentos; mix well. Add macaroni.

In a small bowl, combine mayonnaise, sour cream, milk, salt and pepper and blend well. The dressing will seem thin at first. Pour over macaroni and mix well. Sprinkle chopped eggs on top. Chill for several hours.

Before serving, garnish with whole cherry tomatoes.

Serves 6 - 8

Hope I'm not too late to make a contribution here but my macaroni salad always gets raves. I use shredded carrot, chopped red peppers, and diced olives. Dressing is half mayo and half sour cream with just a tad of dijon mustard. Salt and pepper of course. Yummy.

Do you make the macaroni and cheese and then add the other ingredients? My mouth can't imagine it but it might be good.

I, too, am probably too late but here is a favorite of ours.

MACARONI SALAD

2 c. macaroni, cooked and cooled
2 ripe tomatoes, chopped
1 green onion, chopped
1/2 green pepper, chopped
1/4 c. cucumber, chopped

mix together the following and pour over the above:

1/2 c. sugar
1/2 c. oil
1/3 c. ketchup
1/4 c. vinegar
1 tsp. salt
1/4 tsp. pepper
1 tsp. paprika

I have also added other veggies like broccoli and peas, slivered carrots, etc . Just depends on who is here and what I have on hand. Chill for a few hours before serving.

Macaroni Salad (2)

2 cups macaroni shells cooked and cooled
mayo to moisten and to your own preference
celery seed
finely chopped red onion
salt and pepper
finely diced celery
can of tuna packed in water, drained and flaked with fork, serve on lettuce leaves and sprinkle
paprika on top

Mix together and chill until serving. I also make the same with bow ties and use a can of flaked ham or chicken.

I'm not Sue_va but I did post that Mac and Cheese Salad recipe and yes you make the mac and cheese like it says to on the box and then add the other ingredients. It is good. I also make another one with cooked pasta, chopped hard cooked eggs, sweet pickle relish, chopped celery, chopped onion, chopped sweet peppers and Miracle Whip and a touch of sugar. Add some yellow mustard to it too. Another version is to have cooked pasta, Miracle Whip some sugar, hard cooked eggs, a bit of onion and some chopped celery, some chopped peeled cucumber and some slivers of cheddar cheese. Mix well and chill.
