Balls Salsa Verde recipe question

My Tomatillo's are starting to fill their husks out so I anticipate needing to do something with them soon. I would like to make the Balls Salsa Verde recipe below but replacing the green tomatoes with my tomatillos. Is there any problem with a straight substitution of 7 cups of tomatillos for the 7 cups of tomatoes? Also, the recipe says it makes 6 - 8 oz jars which does not seem correct because the fresh and liquid ingredients add up closer to 11 cups total. Seems like it would be closer to 10 or 11 8 oz jars. Am I missing something?

7 cups chopped cored peeled green tomatoes (about 12 medium)

5 to 10 jalapeno, Habañero or Scotch bonnet peppers, seeded and finely chopped

2 cups chopped red onion (about 2 large)

2 cloves garlic, finely chopped

1/2 cup lime juice

1/2 cup loosely packed finely chopped cilantro

2 tsp ground cumin

1 tsp dried oregano

1 tsp salt1 tsp freshly ground black pepper

6 Ball® (8 oz) half pint glass preserving jars with lids and bands
