Help With Christmas Eve Menu

I have no game, lately. Please help:) I haven't done this in a while and this is a larger group than my normal.

We will be 16 including kids and we are starting around 3:00 pm. I want to do it more open house style since I can't do a sit down for that many. My first thoughts were Ham since it it so forgiving or Lasagna...but that will be for Christmas day.

I already have an 6.35 pound Whole Eye Round Roast and an 8 pound turkey breast.

I have 4 chafing dishes. I am thinking of things that can be ready to go in trays that I can do that morning or the night before. This is kind of old school.

Roast Beef with Wine Gravy

Turkey Breast with Gravy

Tray of Mashed Potatoes

Tray of Sweet Potato Casserole (another DH request)

Green Bean Casserole

Dinner Rolls & Butter

Apps, people are bringing Antipasta and Spinach Dip. I am going to make Shrimp Cocktail, Cheese & Crackers, Olives, etc...and piggies in blankets.

I did the mashed potatoes like this before and they worked great. So I am thinking the meats will be carved and on platters - afraid they will start to cook on a sterno? That means I have 1 tray left to fill. DH says cocktail meatballs - I was thinking Popcorn Cauliflower. I am also really leaning towards going with fresh green beans but Dh thinks the casserole will hold well and everyone loves that thing. Is it okay to do the meat like that?
