we're having a chicken crockpot dish dil and ds2 are making. sort of wish she'd been a bit more descriptive...

but we're bringing costco pies and cheesecake. i'll make dh's corn souffle the day after, with ham...he loves it.

she just felt everyone would have enough ham or turkey.

We will have about the same as Thanksgivng.

What is cookie salad? recipe please

Our family gets together on Christmas Eve.
We usually have tons of finger foods and goodies. I end up spending at least a week baking and cooking.

This year we are having a sit down (10 people) dinner that is sure to be much easier on me. The kids are in charge of all the goodies.

I'm preparing:

Beef Brisket (already prepared from Sam's)
Crashed Hot Potatoes ( recipe from Nodakgal)
Green beans (un-doctored)
French bread and a couple spreads
Apple slices and grapes

I need to decide on a salad yet.

There are different Cookie Salad recipes.Some with mandarin oranges and bananas or pineapple. This is the one I use.

Fudge Stripe Cookie Salad
Mix together:
1 pkg instant vanilla pudding
1 cup buttermilk

2-8oz Cool Whip
1 pkg fudge striped cookies
3 to 5 bananas
Crush cookies roughly, and reserve a little for the top. Fold cookies, bananas and Cool Whip into pudding mixture. Top with remaining crushed cookies just before serving.

Nodakgal, are you Ritz date cookies made with condensed milk and iced with cream cheese frosting? I had to google for a recipe because Ritz crackers and dates are two of my favorite things!

For Christmas dinner we're having:

Sue, that three-crockpot thing (I don't know what to call it) the girls gave you will sure come in handy to keep the vegetables warm!

I just finished planning with my sister. We will have ham, a sauce for it (probably apple cider sauce), au gratin potatoes, pumpkin bread, rolls, sugar snap peas, citrus salad, and lemon custard merengues with raspberry sauce.

It is a simpler menu than usual, but we will be only 6 this year.

Somehow I need to bake some Spritz and other Christmas cookies, but if I do it now, I will eat them myself!

Chili soup, possibly chicken noodle too.

It will just be two of us for Christmas eve. We usually do seafood. Crab or lobster or something. I have 2 frozen tails. That might work.

Or we might have fondue in front of the fire..... hmmmm

Christmas day we are doing Thanksgiving over again. My daughter had pneumonia over Thanksgiving so she missed dinner here and said she really missed the turkey and stuffing we make. So it will be turkey part deux. Just 4 of us. Her and her BF and us.

This weekend she is spending one night so we will be baking together on Sat. We haven't done that in years. Only making a few things as non of us want to eat it all. Mostly for gifts. Making biscotti and fudge and truffles. She will bring her dog.... so 2 dogs and 4 cats in the house. The cats will hide all day and the dogs will chase each other... will be a zoo here!

Christmas eve will probably be lobster ravioli with pink vodka sauce and a salad. Christmas day is tenderloin of beef with roasted potatoes and green beans with slivered almonds. Since it's just DDs and I, we will go light on the goodies, maybe just a store bought cake or pastries from a good bakery.

I'm thinking of making a small ham (my two want it), seafood crepes, mashed potatoes and gravy, broccoli or some other vegetable, veggie tray, some type of rolls and apple pie. I'm not making a ton of food again like I did at Thanksgiving because I threw out a lot of food.

Dessert- maybe a Chocolate Date Nut cake, my Dad's fave.

It'll just be the 4 of us- Woody, me, my parents. Low key, no stress, perfect! They will take home half the leftovers, too.

Patti 43, yes the warming crocks are really handy. I have two sets of them, one set is smaller than the other and it is all metal, the other is like 3 small crock pots with individual controls. They are really handy. If I needed more I could drag out the big electric roasters and I have buffet inserts for those also. Plus I have a large chafing pan with little can of stuff you light and put under it. I have several warming trays also. I have never had to have all the stuff out at once to use :)
