I am going to attempt my first prime rib. My man is a meat eater, and I aim to please. We had turkey for Thanksgiving, and wayyy too much of it. I don't care if I see Turkey again for years.

I am going to make a crown roast with homemade stuffing in the middle and beef tenderloin. I think my Mom is bringing a ham. Candied Sweet potatoes, brussels sprouts, jello from the kt recipes, green beans, croissants, a flourless chocolate cake, a candy cane cheesecake, some Christmas cookies.

Man, oh man, Sue--I do think you could feed us all! Everythings sounds delicious--especially the noodles :-)

Sleeperblues, your crown roast will be so pretty on the table. I've never made one, but I love the looks of them. They had beef tenderloin on sale this week (still pricey though) but I opted for a standing rib roast. I'll seal it though and save it for when the kids come in April.

Jeaninwa, you'll find rib roast is the easiest meal you ever cooked. Just have a good meat thermometer on hand so you don't overcook it.

We're having ham and I think I'm going to feel the same way about it as Jeaninwa feels about turkey.

Maybe you could do the duchess potatoes she just posted. We usually do some sort of scalloped potatoes with ham (or potatoes au gratin).

I don't know what my sister is making for Christmas. She changes it up every year. Last year it was brisket. I bring the cookies (and the rice pudding for Christmas Eve dessert).

I found a recipe where you preheat the oven to 550..put the roast in for like 5 min per lb then turn the oven off and leave the door closed for at least 2 hours. That's the one I'm going to use. :)

Probably left overs as we do our Christmas meal Christmas eve. Prime rib + what ever my DD cooks. Simple but oh so good.

My parents are coming over for dinner. Mum just turned 91!

I bought a gigantic 12 pound standing rib roast (there are only 4 of us for dinner, we want leftovers for all of us) and we'll have roasted/seasoned potatoes, broccoli, spiced peaches and cherry pie ala mode for dessert. We like to keep it simple.

We'll play a game between dinner and dessert, but I predict they'll be on their way home by 3 PM. It's going to be a lovely day.

I'll be having Christmas dinner with friends so I don't know what's on the menu yet.

I'm hosting a Christmas Eve taco buffet tomorrow. I'll have a wide assortment of toppings, taco shells and tortillas, broiled squash, and the desserts others bring.

After my Thanksgiving Turkey fiasco, I'm not trying anything more complicated than slicing-and-dicing. LOL

We are very low keyed, it will be the two of us and my BFF and his partner. We will have ham, kielbassi, hot German potato salad, greenbean casserole, fresh veggies, rolls, red velvet cheesecake. And whatever Jeffrey surprises me with! They celebrate the Orthodox Christmas so we will do this again at their house in a couple of weeks, but with different food.

Lots of snackables, white chili, sweets for dessert.

Thinking I'll be blessed with my son and gs, hopefully!

And a fire in the fireplace, even if it is warm :o)

For Prime Rib this is the most amazing recipe and may be the one mentioned, it will scare the heck out of you at first but follow the rules!!! On another forum I was on for years so many people used this recipe it became one of the ones that stayed up all the time. So it is very very tried and true!!

Prime rib

Cover prime rib with olive oil. Press on garlic pepper/kosher salt seasoning (the kind with big chunks of salt, very coarse pepper)� (Or use the McCormick Montr�al Pepper blend)

Preheat oven to 500 degrees F. Yes, that's right, 500 degrees.

When it's HOT HOT HOT, put the uncovered roast inside. DO NOT OPEN THE OVEN even once during the entire process.

Leave the oven turned on for 8 minutes per pound of roast (minimum of 40 minutes). Then shut the oven off and leave it in there for a TOTAL of 2 hours (combined HOT time and REST time)

Take it out and cover it with tin foil. Leave it rest on the counter for 15 minutes before cutting. It will be perfectly dark pink in the center, juicy and flavorful.

During the time that the oven is turned on, you will hear sizzling and popping and smoke may even come out of the oven. Do not let this alarm you. Shut the kitchen door and keep the smoke alarm in the house from going insane.

The smell will drive you crazy, but you must resist the temptation to open the oven and peek. The reason this method works is because the initial high heat seers in the juices. The outside of your roast will be crispy and delicious. The inside will be tender and just plain good

This year I decided I am not cooking, I have been having problems with my back and just am not feeling up to it so we are looking for some place that will have a good Christmas dinner or buffet. If anyone knows of any restaurants that will be doing that please post it.
We used to go to a wonderful place about a mile from here but they have since changed owners and the new owners are not doing that. Someone told me Cracker Barrel does it??

We are going to my SIL/BIL for a family dinner - all Italian food - aroncini (rice balls), sauce w/ meat(sausage & roast beef), veal parmesean, brijole, baked ziti, fried calamari, fried shrimp and a much needed tossed salad!

I will spend time with my kids after Christmas this year, so I am having a "gathering of orphans, reverse-orphans and orphan wannabes" for Christmas. Don't want to be by myself, so I'm having others who don't prefer to be alone.
