What's for dinner Sunday?

We're headed for MacDonald's drive-thru. Way to tired to cook. Today I had to go from 3 refrigerators to 2. Lordy, it took me all day to get stuff out of all the frig's and get them arranged the way that will work best for me. I know one thing. We have way, way too much food. And I know another--that crap isn't going to happen ever again. Had doubles of 3 jams, 2 frozen veggies and nuts. I have to stop every once in a while because of my stupid back, but finally took a couple of Aleve, which helped tremendously.

Sorry--there I go ranting yet again. Hope you had a nice, quiet and happy day ;-)

Mama Goldberg's for my usual: bologna with pepper jack cheese on rye with mayo, mustard and lettuce. Kettle chips

YOu make me tired from all your work, so I'll take a nap for the both of us :o)

I'm still decorating. It took me longer to get my tree done because when I plugged in the lights, half of the strands were out. I hate those lights! I had to remove all the strands and put new ones on. Not fun. All that bending took its toll on my back so I had to rest it for awhile. I can empathize with you, Patti. We're having spaghetti, garlic bread and tossed salad because I need some leftovers for tomorrow night. Tomorrow is Mexican train and I have to be out of here early.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

I've thawed a couple of boneless chicken breasts (I'll save a little of one for a soup for my lunch ala Raven) and plenty of fresh veggies for a stir fry. Robert will be my sous chef.....there will be lots of chopping and dicing and my hands are so sore from yesterday's pruning. He's using my mandolin, so let us pray. Let's see....green pepper, onion, garlic, fresh ginger, broccoli, carrots, Chinese cabbage, shiitake mushrooms, sugar snap peas. I'll season the brown rice with a little sesame oil.....so fragrant.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

Sweet Betsy, that sounds heavenly. Enjoy! Mary, it would've been a good day to work outside here, too. Nice, easy dinner after all that. Raven, I dreaded going to the store because it's always so crowded at the first few days of the month. I was surprised that there wasn't that many people shopping (Publix). Hounds x two, I can almost smell your roast. Yum! LOL at your dogs! Sandie, it's a little too cold for me. I think you're further south though. I like the mid-80's best. But it is nice to turn on the oven for a nice roast. You have a very intelligent dog. She was getting you prepared for today :-) Shirley, I will forever appreciate a BLT--or anything with bacon--when I can eat it again! Enjoy it for me!

I had a pork roast with StoveTop stuffing, and green beans. Sent some home with my son, along with some of my chili, and mac/cheese I made yesterday.

I have been doing laundry. Also been playing with my Galaxy tablet, so much to learn. Glad I have Mike to show me the ropes.

We are having ribs, steamed rice and a mixture of green/yellow beans with baby carrots. It sure smells good in here.

Glad you got your refrigerators all taken care of Patti. Now you can keep running into the kitchen to gaze at that HUGE monster. LOL

Glenda, I would have been so happy with your dinner. Our MickeyD's were pretty good, but I'm so tired I couldn't eat all of it.

Georgysmom, that happened to me once. (Where half the lights were out.) We usually checked them all before we put them on, but one year one of Harry's buds came over and they sat and drank coffee while I decided to go ahead and put the lights on. They were all laid out on the floor so I "assumed" they'd been checked. I got about 3/4 of the way through before I thought to ask Harry if they were okay. He hadn't checked them. But he sat right there and let me put them on anyway. Of course, that long middle strand didn't work. Mama wasn't happy--and I bet you weren't either.

Shirley, that sounds yummy. Thinking your son must be so happy he got leftovers.

Nita, did you have to really think about where to put everything in your frig? Boy I sure did. Guess that's why it took me almost the entire day. You always have a great dinner. Mike's a lucky guy!

Simple supper tonight for a Sunday family dinner. Not much bother.
Grilled Salmon with sweet potato fries and steamed asparagus with Holladaise sauce. Ice cream and coffee for dessert.

We had tortilla soup, it was yummy! New seafood place last night was terrible. I couldn't eat my food. Went next door to the wine bar and had some delicious bruschetta!
