Easy Ground Beef Casserole with Potatoes

An easy ground beef casserole with potatoes and cheese.

INGREDIENTS:

Â 1 to 1 1/2 pounds lean ground beef, browned

Â 1/2 cup chopped onion

Â salt and pepper

Â 3 large potatoes, sliced

Â 2 Carrots, shredded

Â 1 can cream of mushroom soup

Â 1 cup shredded Cheddar cheese

PREPARATION:

Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes.

Put soup over carrots and bake at 350Â° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.

This easy ground beef and potato casserole serves 4 to 6.

I haven't had that Ground Beef casserole in a really long time. It is also good with sweet Italian sausage. Yum!

My breakfast casserole:

1 pound breakfast sausage (like Jimmy Dean and I sometimes use 2 pounds)
1/2 red, orange or yellow bell pepper, diced (or all 3 if you like them)
1 small onion, diced
1 package sliced fresh mushrooms
minced garlic to taste
8 ounces cheddar cheese, grated (or other cheeses that you like...we like a lot of cheese, so I add a lot)
olive or vegetable oil
small package hash browns
6-8 eggs, beaten
3 tablespoons flour
3 cups (+/-) milk, cream and/or half and half

Brown the sausage, pepper, onion and mushrooms in about a tablespoon of the oil, until the sausage is cooked thru. You can add the garlic at the beginning or toward the end. If you add in the beginning, your garlic flavor will be mild. At the end, stronger.

Place the hash browns in a greased casserole dish. Put a layer of 2/3's of the meat mixture. Top with the cheddar cheese. Top with the beaten eggs. (You can add some of the milk at this point if you have added a lot of cheese, so it will be a little creamier.)

Bake for 35 to 40 minutes at 350, until the eggs are set.

Add the flour to the remaining meat mixture and cook for several minutes, until the flour has browned nicely. Slowly add the milk (or cream and/or half and half) stirring constantly. Bring to a boil and cook until thickened.

Tada! Gravy to be poured on top of casserole for those that like it that way. LOL

I don't normally measure when I cook, so I didn't give quantities for items like salt (which I don't use), pepper, paprika, cumin or any other spices that I may add. I just look at my spices and put in what I think would be good. Anything can be added to this that you like. I season as I cook and then I layer seasonings as I put it in the casserole.

This will serve about 8? Depends on how much your guys eat. LOL

I have the same recipe as luckygardnr only instead of potatoes we use noodles and velveeta cheese. really good

My 58 Year Old Refrigerator Rolls Recipe 1 quart milk 1 cup vegetable shortening 1 cup white sugar 1 package of yeast 1/4 cup warm water 8 - 9 cups flour 2 Tablespoons salt 1 Teaspoon baking soda 2 Teaspoons baking powder Heat the milk and add the sugar and shortening, stir until well dissolved. Let cool until you can add the yeast that has been dissolved in the warm water. Do not add while the milk mixture is too hot. You can do all of this in a large stock pot with lid if you wish. Then add around 6 cups of the flour, stir well, put the lid on and set in a nice warm place and let rise until double in bulk. Then stir down and add the salt, baking soda, and baking powder plus additional flour to make a little firmer dough. This should be a soft dough that will stiffen up in the refrigerator. It must be refrigerated many hours or over night. I put my dough in a big tall Tupperware container, like a two gallon one, with a tight fitting lid. Be sure and check on it as it may over flow into your refrigerator. After refrigeration, take out amounts as needed. This will keep a good week in the refrigerator. Do not knead this dough, kneading it will make the dough too stiff and you will end up with harder rolls. Just use enough flour to handle. I like to just roll the dough out like for jelly rolls and spread with melted butter or margarine, roll up and cut in pieces to fit your muffin pans. Be sure and grease your pans with shortening or the pan coating using the flour, veg. shortening and oil. Butter the tops of rolls, put in a warm place cover and let rise. Do not let them over rise, when ready bake in a preheated oven at 425 degrees, for 12 to 14 minutes. Ovens vary so use your own judgment. I received a cookbook from a furniture store just after we were married and this was in it. It is the best yeast roll dough and everyone seems to enjoy them. It probably makes 24 to 30 rolls. I will be making a double batch of these today to bake later this week to take to our church dinner this coming Sunday. Just remember, not too much flour and do not knead and these should be great for you. They are also very good made into cinnamon rolls. Sue

This is a nice side dish with roast beef or roasted chicken Roasted Fingerlings and Green Beans With Creamy Tarragon Dressing Makes: 4-6 servings Prep: 15 mins. Taco Casserole
1 pkg crescent rolls
1 pkg Doritos, crushed
1 to 1 1/2 lbs browned hamburger
1 pkg taco seasoning
1 pint sour cream
1/2 lb cheddar cheese,shredded
toppings as desired
Unroll rolls into 9x13 pan. Layer 1/2 the Doritos chips, then hamburger mixed with taco seasoning. Then sour cream,cheese and 1/2 of chips. Bake at 350 degrees for 20 minutes. Top as desired with chopped lettuce, tomatoes, onions,olives, etc.

One of DH and DS's favorite casserole is just a pound of hamburger,browned with onions. Diced potatoes and sliced carrots. Pour a can of undiluted tomato soup over and a small can of V-8 juice. Sprinkle with basil and salt and pepper. Bake in the oven. They are crazy for it.
