This is what I just took out of the oven.

Reuben Mini-meatloaves

1 lb very lean ground beef
1 sm can sauerkraut, rinsed/drained (this removes a lot of the excess salt)
1/3 c Quaker oats, soak about 5 minutes in about 1/4 cup milk
1 egg
1 T minced dried onions
1 T dried parsley flakes
1/2 tsp thyme
salt/pepper to taste
3 T ff miracle whip
2 T ketchup

Mix together all but beef and sauerkraut. Add sauerkraut and mix well. Add ground beef and mix only until it holds together. Divide into 8/10 mini-loaves, place in a baking dish. Bake covered for approx 50/60 min @375 degrees, then remove cover and bake an addt'l 10 to 15 min or until done.

I am having the same dilemmaÂI canÂt come up with anything new!
I decided to make my old stand-by hamburger roll-up. Brown your hamburger with a little onion & celery, seasoning to taste. Drain & let cool. Make a double batch of Bisque biscuit recipe. Roll out in to rectangle. Spread the cooled hamburger over the dough, leaving a small plain edge for sealing. Roll the dough length-wise, like pin-wheel cookies. Seal the edges with a little milk & tuck under. Carefully move it onto a lightly greased cookie sheet. Bake seam side down at 350 until browned. I decorate the top with left over dough or just sprinkle with spices. As the roll-up is baking, I either make homemade white gravy or open a couple of jars :~) When the hamburger roll- up is done, slice & pour the gravy over it. I serve it with a mixed green salad & some type of veg. My family love this.

OMG!! I never thought about amounts! I'm so use to not measuring, I just eye it up & taste as I go. I use about 2 pounds of ground round, 1/2 cup onions & 1/2 cup celery. I also make lots of gravy as my boys love it the next day.

Stuffed metballs

Lean Hamb.
mix with a beaten egg
S & P, and poultry seasoning
Bread crumbs or I used stuffing croutons, crushed
In another bowl. make some of your own stuffing or use Stove Top Stuffing, prepared.
Divide meat into 4 piles. On a piece of wax paper, pat into about an 8" circle. Put a small handful of stuffing in center, and with hands work meat up and over to form a meatball encasing the stuffing. Put in a baking pan. Mix a cn of Cr, of chicken soup with a little milk. Pour over meatballs, cover with foil and bake about 45 minutes.

Minestrone Soup

1 large can tomatoes (crushed)
1 can tomato soup
1 can kidney beans
1 can baby carrots (cut up)
2 cubes or envelopes beef bouillon, dissolved in 2 cups water
½ cup macaroni
1 lb ground beef, cooked
1 onion, chopped and cooked with the ground beef
salt, pepper, garlic powder, oregano and other spices to taste
Combine all ingredients in large pot. Simmer until macaroni is cooked. Serve with garlic bread.

The best place for ground beef is in pot of chili or chili stew.

Tater Tot Casserole

1 ½ to 2 lb of ground hamburger
½ onion (chopped)
2 cans cream of mushroom soup
1 can of whole kernel corn (drained)
1 bag tater tots
1 cup (about) shredded cheese

Brown hamburger and onion. Drain.
Add cream of mushroom soup and corn stir together.
Place mixture in the bottom of a 9X13 cake pan.
Put cheese on top
Lay tater tots on top of the mixture.
Place in 350' oven
Bake about 40 minutes till tater tots are brown.

Just made this today. I made 2 boxes of corn muffin mix and put it into a 9 X 13 pan to bake while I browned 2 lbs. ground beef on the stove. Seasoned the meat with some worchestershire sauce. Drained off the grease and poured in 2 cans of rotel tomatoes. Then I added the meat/tomato mixture to the corn muffin mix in the oven and let it bake for about 40 minutes. Super simple; very tasty; and very filling.

I cook this 2-3 times a month, b/c we LOVE it:

ground beef (1-2 #)
packet of dried onion soup mix
cabbage (2-4 #) cored, washed & sliced about 1 in. thick
about 8 oz. cooked noodles

Brown meat in dutch oven. Add soup mix, about 1/2 cup water & cabbage. Cook until cabbage is tender (about 30-45 mins.) stirring occasionally to separate cabbage & bring liquid & meat up over cabbage. When cabbage is done, stir in drained noodles. We serve it in a bowl and add a dollop of sour cream to each serving.

My very fussy DD loves stuffed peppers! Sometimes I make them with ground beef, other times with ground pork or turkey.

Sue36, you mentioned stuffed zucchini and stuffed tomatoes? Mmmmm, that sounds so yummy! Care to share your recipes? I especially love zucchini!

Meat pies....brown HB meat Seasoned with onions, bell peppers.S&P...DRAIN ....take canned biscuits...roll them out in a circle...put a couple spoons of HB meat...then a spoonful of cheese whiz...fold over and seal sides and bake till brown...(I add a couple slices of jalapeno peppers to mine)...Mary

~*~Unstuffed Pepper Soup~*~

I sauted the green peppers and onions,then add to the cooked ground beef.

1 1/2 pounds ground beef
3 large green peppers -- chopped
1 large onion -- chopped
2 (14-1/2-ounce) cans beef broth
2 (10-3/4-ounce) cans condensed tomato soup -- undiluted
1 (28-ounce) can crushed tomatoes -- undrained
1 (4-ounce) can mushroom stems and pieces -- drained
1 1/2 cups cooked rice

In a Dutch oven or large saucepan, cook the beef, green peppers and onion over medium heat until meat is no longer pink; drain. Stir in the broth, soup, tomatoes and mushrooms. Bring to a boil. Reduce heat; cover and simmer for at least 30 minutes, stirring occasionally. Add rice and heat through.

~*~Easy Hamburger Lasagna~*~
This is very good!

Brown together and then drain off grease:
1 lb. hamburger meat
1 medium onion, chopped
Add: 1 jar spaghetti sauce
Simmer 5 minutes.

Cook: 1 bag wide noodles(I used bow-tie pasta)
Drain and to the noodles add:
1- 8oz. ct. sour cream
1 tsp. garlic powder
1/4 cup (or more) real parmesan cheese, grated

In a greased casserole dish, layer meat mixture and noodle mixture twice. Top with grated mozzarella cheese. Bake at 350* 30 minutes or until heated through.

2 cans chili w/beans
1 can corn
1/4 lb grated cheese

Cornbread
Drain most of juice off corn. Brown peppers and onions in butter or oil. Dump in chili and corn. Stir in cheese til melted. Pour in oblong baking dish. Mix up cornbread and pour on top of chili (don't let edges meet dish). Bake at 350-400 degrees til cornbread is done.

Or make up a pot of chili with your recipe, mix up some cornbread, or use a Jiffy Mix.

1 lb. lean ground beef
1 chopped onion
1 or 2 cloves of garlic, minced
1/4 to 1/2 lb sliced fresh mushrooms
1 10 oz. package chopped spinach thawed and squeezed "dry" or 1 lb. fresh spinach
3 eggs, lightly beaten
salt & pepper
1/4 teaspoon nutmeg
1/4 teaspoon dried oregano

Brown meat in a large skillet on med-hi heat in a little oil to keep from sticking. Add onion, garlic, and mushrooms. Lower heat and cook until onion is soft. Add 1-1/4 teaspoon salt, 1/4 teaspoon black pepper, the nutmeg and oregano. Add the spinach and cook for 5 minutes, stirring occasionally. Make a hole in the center of the mixture and add the eggs. Stir into mixture quickly and cook a couple minutes more until the eggs are done. Serve immediately.

You can adjust this to suit your personal taste. More meat, more spinach less egg etc. Different seasoning.

I have never really used a recipe. I had to Google to find one similar enough to mine to get measurements.

Russian Cotletti

1 1/2 pounds ground beef
1 finely chopped onion
1 large egg
salt and pepper (to taste)
dry breadcrumbs
fat for frying

Mix together ground beef,onions and egg. Salt and pepper to taste.

Form the mixture into patties about 2" by 3" by 1" thick.
Coat all sides well with breadcrumbs and fry in fat on each side until well browned and meat is done. Use enough fat to promote browning. Similar to frying chicken. You want the oil to come slightly up the sides of the patty so everything browns evenly.

I like them plain but you can add a little water to the drippings, a couple spoons of sour cream and a little Kitchen Bouquet (optional) for gravy.

Here's a favorite of my family:

Chinese Hamburger

Lightly cook a medium chopped onion and a minced clove of garlic in cooking oil. Add about 1 pound of lean ground beef and brown lightly. Add three cups of hot water and 2 tablespoons of soy sauce.

When mixture is boiling add about a pound of fresh green beans (canned will do)cut in small pieces. Cook until beans are tender crisp. Thicken mixture with cornstarch mixed with water. Cook until mixture thickens to gravy consistency. Serve over rice with more soy sauce at the table.

I've copied/pasted some of these to try at a future date. The Chinese Hamburger is really a new idea to me. I hope it won't hurt to cut the soy sauce down some as even low sodium version is still high for me.
