lost the recipe...cornbread/ground beef

Does anyone remember the thread from early this year or late last year where we talked about baking a mix of cornbread and ground beef seasoned with I think it was steak sauce and something else...

I quit making it when the weather turned warm, and now I can't find the directions. Tried searching just cornbread, but that didn't locate it.

If anyone can refresh my memory, I'd sure appreciate it. That's good stuff!!!!

Was it like a Shepard's Pie or was the meat and sauce mixed into the cornbread?

I've frozen meat for trash day.....in my case for the green bin. I don't want to put the meat too early in the bin. Might as well inhibit any smells or raccoon hits as much as possible :) I also have several small bags of chopped veggies in the freezer destined for my composting worms. They are in clear bags, so easily identified. I also have a larger bag of watermelon rinds as a treat for them. :D

I've been doing this for years and years, now. I also buy whole hogs and free-range chickens. I just LOVE sailing past the meat counter at the grocery stores, especially since so much of what's there is nasty, injected, hormone-laced junk. IF you buy locally (try Local Harvest or Eat Wild, on the web, for farmers in your region) you can find excellent deals. I buy natural--no antibiotics or hormones--beef, grass-raised and corn-finished, by the side. I got one in September and I only paid around $450 ?? (maybe closer to $500; can't remember) dollars for a side of beef: that's hundreds of pounds of healthy steaks,prime rib, pot roasts, stew meant, ground meat, etc. My pig went to market this week. I'm getting about 125--140 pounds of pork chops, roasts, tenderloin, sausage, summer sausage, ground pork, ribs, hocks, hams and bacon for a total cost of about $260. AND it's the same quality pork (non-confinement, natural, hormone/antiobiotic-free, milk-feed) as sold by fancy-schmancy places like Niman Ranch, for a fraction of the cost. I have two freezers in my basement and also rent a locker from the butcher who processes the meat for overflow. That only costs me an additional $5 a month. Additionally, I have the satisfaction of dealing directly with the good folks who work hard to feed our families, and they actually make *more* selling directly to consumers in many cases, than they would dealing with big Agri-Business. It's the ONLY way to go, now, in my opinion. Plus, I just adore that "Little House on the Prairie"/all stocked up for the winter feeling of security.

I can't believe your precious Dyson met such a brutal fate. You poor darling, you deserve sympathy cards. What a shock that must have been to you. I do recall hearing a crunching sound when backing up in my own car before -- very unnerving. Which model did you have? I just got the DC18 from Bed Bath & Beyond with their 20% off coupon. After days of looking around, that was the best deal from a reputable source. I love that model, btw, and it's "really on the ball." lol. Good luck and keep us posted.

True. Sometimes they just say "mince", as well. But then there's mincemeat, which originally contained meat, but is often just fruit, booze and spices, sometimes with meat fat, nowadays (according to Wikipedia, because it's something I've only heard of and marvelled at--but now that I know it used to have meat in it I understand better why it's called "meat" :) ). Ci_lantro, I'm sure you're right about it being regional. Calling it "hamburger" made me think of old movies where they say the boxer's face looked like "hamburger". I always knew they meant raw ground beef, not sandwiches. :) But they inevitably had some kind of New York or maybe Boston or Rhode Island, accent. Distinctively Northeast, anyway. The kind of guys who called clueless people "mugs". OH!!! "Mugs"! Like 'Muggles"!!! Oh!! Found a cognate! How fun!

Are you thinking of Amigo Pie? I made this a lot in the 80's. This recipe is from a google search but it sounds like the one that I used.

AMIGO PIE

1/4 c. flour
3/4 c. cornmeal
1/2 tsp. baking powder
1 c. hot water
2 tbsp. butter
1 1/2 c. shredded Cheddar
1/2 c. sliced ripe olives

FILLING:

1 lb. ground beef
1 c. chopped onion
8 oz. can tomato sauce
1 env. taco mix
1/2 c. sliced ripe olives

Brown meat, drain. Add onion, olives, tomato sauce and seasoning. Simmer 10 minutes.
In separate bowl combine cornmeal, flour and baking powder. Add water and melted butter; mix until smooth. Stir in 1 cup Cheddar cheese and olives. Pour mixture into greased 10 inch pie plate.

Spoon meat mixture onto center to within 1 inch of edge. Gently press down. Top with remaining cheese and olive slices. Bake at 400 degrees for 25 minutes.

Cynic, Mollycat's recipe is close.

It's not really a shepherd's pie if I'm correct about what a shepher's pie is (meat & veggies under mashed potatoes).

This recipe called for a cornbread mix that you partially bake, then add the meat mixture--ground beef and seasoning. We couldn't figure out if you stir the meat mix into the cornbread or just spread it on top.

I mixed it into the half-cooked cornbread and finished baking it. It sounds kinda weird, but it's really good.

My problem now is I can't remember what I seasoned the meat with. I think I used worcestershire sauce or steak sauce, and Rotel tomatoes with peppers.

In fact, I'm pretty sure that's what I used because I did't have the OP's ingredients and I did't want to wait until I could get them.

They're right--the mind is the first to go....

This is similar to the version I have had:

BEEF - FILLED CORN BREAD SQUARES

1 lb. ground beef
1/3 c. chopped onion
1 clove garlic
1/4 c. ketchup
3/4 tsp. salt
1 (10 oz.) pkg. corn bread mix
1/2 c. shredded American cheese

4 tbsp. cold water
4 tsp. cornstarch
1 (16 oz.) can tomatoes, cut up
1 (4 oz.) can chopped green chili peppers
4 tbsp. chopped green pepper
2 tsp. Worcestershire sauce

In skillet cook beef, onion and garlic until meat is brown; drain off fat. Stir in ketchup and salt; set aside.
In bowl prepare corn bread mix. Spread half the batter in a greased 8 x 8 x 2 inch baking pan. Spoon beef mixture over batter in pan. Sprinkle with cheese. Spread remaining batter over cheese. Bake uncovered, at 350 degrees for 30-35 minutes or until corn bread is done.

Meanwhile in small saucepan blend cold water with cornstarch. Stir in undrained tomatoes, chili peppers, green pepper and Worcestershire sauce. Cook and stir until thickened, cut and serve sauce over.

I made Amigo Pie for dinner. I had all the ingredients on hand! Hooray! However, I think the temp of 400 might be too high. The botton of the dough layer got hard and dry, and the same with the meat on top. Tough to chew. DH and I each ate a small piece,and our dog got a nice-sized helping. I promised DH I will never make it again! Just my honest opinion-maybe cook less time or at a lower temperature.

The amigo pie sounds really good to me and I will try it for sure. I will use a homemade taco seasoning mix just because of the salt content in packaged.

If you want to try a homemade taco seasoning mix, it's much better flavored and it is also way cheaper.....a few cents worth of spices is all it costs instead of close to a buck.......

Do-it-Yourself Taco Seasoning Recipe

6 Tablespoons Chili Powder

2 Tablespoons Cumin

4 Tablespoons Paprika

3 Tablespoons Onion Powder

1 Tablespoon garlic powder

1 Teaspoon cayenne pepper (this makes it very spicy, add more or less to taste)

Mix all ingredients together and stir in an airtight container. An empty spice shaker bottle works well, as does a small Rubbermaid or Tupperware food storage container.This is a basic mix I got off the internet at Hub Pages but if you Google taco spice mix you will find it on many different sites.....mostly the same spices though.....

Jannie, the cornbread mix I used called for 375 degrees, and I set my oven a tad lower than that. Also put in about a half to 3/4 cup of cream-style corn for a moister cornbread.

those original recipes for sauce and for taco seasoning sure sound good.
