Good morning, Sue. It's a bright, sunny day after a few days of gray due to Isaac. Our days have been in the high 80's, which is really nice.

Today I'm cleaning and doing laundry. Our GD and her DH will be here Sunday and staying until Thursday. We're taking them to Homosassa for a couple of days like we took her parents and sister this spring. I know they will enjoy it. She's a great photographer so that's the perfect place for her!

Good Morning, nothing going on today. The sun is shining and no wind. The temp is 73 which is definitely WONDERFUL. I will be doing the usual, jigsaw puzzles, having fun on this machine, playing Mortimer Beckett games, reading and watching movies. I watched 3 Charles Bronson, one was awful, sick is the best description. The other two were good. Finally found a lady to do my floors for me. Most cleaners will not do them because it is not worth their time.

I am enjoying my new wireless keyboard. I waited to long to get one.

Morning! It's raining here. Stayed up late playing Risk and card games with Maria and her boyfriend. The other two kids had to drop out to do homework and go to bed for school today. Got up early to get the kids up for school, they still managed to miss the bus. The bus came early and Lauren thought it was the first bus, not theirs'. So, I had to drive them to school. Back to bed for a couple hours and now I'm up making my breakfast: coffee, leftover tomato basil red pepper soup and half a tuna salad sandwich from our dinner last night.

I'll be spending the day doing dishes, laundry and making spaghetti for dinner tonight and the next couple days since I have to work the next three days.

The weekend is going to be busy, have an old friend stopping by on Saturday and then Sunday we are having a party for Maria. She leaves Monday.

Warm and muggy here. Had the back door open this morning for only a short while until the humid air began heating up the house. I got up late, around 9am, had breakfast, changed the sheets on the bed, the comforter is in the washing machine right now, and I should get off this computer and accomplish something else; but figure this will be a lazy day for me.

Anytime, Any Kind Muffins

Ingredients

6 Cups old Fashioned Oats
5 cups all purpose flour
2 cups very hot water
1 cup shortening, melted (such as Crisco, can substitute melted butter)
2 cups sugar
4 eggs
4 cups buttermilk
5 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons salt

Instructions

For each batch, you can add 1/2 cup mix ins to one cup of batter. Mix in ideas are: Blueberries, chocolate chips, sliced almonds, walnuts, chopped pecans, diced apples, dried cranberries or cherries, other dried fruit or berries, chopped banana
In a medium bowl, place 2 cups oats and hot water. Stir and set aside.
Place all remaining dry ingredients into a large bowl or dishpan. Stir to combine. Form a well in the center and crack eggs into the well while beating them lightly with a spoon. Add milk and stir batter well with large spoon until well combined.
Melt shortening or butter and pour into hot oat mixture, stir. Pour hot oats into batter and stir again until well combined. Cover and refrigerate at least overnight.
To make 4 muffins muffins: 1 cup of muffin mix makes approximately 4 muffins. To every cup, add about 1/2 cup of mix ins such as berries, chocolate chips, nuts, or dried fruit. See post above for more ideas.
To make only one muffin, use 1/4 cup batter and approximately 2 tablespoons mix ins.
Bake in greased muffin tin or a muffin tin lined with cupcake papers at 400 for 20 minutes, or until lightly browned.
Batter keeps for up to a month. Prepared muffins freeze well as does batter.
Makes approximately 60 muffins. Batter can easily be halved.

I took my vehicle in to have the brakes checked and stopped at the grocery store for a few things. It's supposed to be hot the next few days so I thought I'd get some cool things to eat. Closed up when I got home and started the a/c. Only about 76 here right now but supposed to be in the 90s to 100ð+ the next couple days so I'm going to cool it down and dry it out before the big push comes in. I need to schedule a followup appointment with the doctor and that's about it for today except maybe squeeze in a nap and maybe, just maybe head to Menards for a bit.
