Grape Salad (pic) and not a bite left!

Sorry I didn't make the rhubarb crisp, rhubarb is in freezer and ready to be prepared SOON!

This recipe came out PERFECT and lunch gals loved it!

There was nothing left!

Grape Salad

1 1/2 lb each red and green seedless grapes, washed and patted completely dry

Mix 8 oz each fat free sour cream(room temp), ff cream cheese until well blended.

Stir in 1/2 cup sugar/ or splenda and 1 tsp vanilla.

Fold in grapes until completely covered.

Spread into a large glass container.

Slightly brown 4 oz chopped pecans or walnuts, when cool stir into 3/4 cup brown sugar.

Sprinkle mixture completely over top of grapes and give it a gentle pat.

Cover overnight, with seran wrap and ENJOY!

Looks great! Curious when using Splenda would it be the same or less as it is sweeter.

Glenda, I make this salad and it's always a hit. Yours is prettier than mine though!! I used all red grapes on Friday because they were 99 cents a pound. The recipe is exactly the same.

Trudi, UPDATE: You said, "If tomatoes reseed in your zone 8 garden then you can WS them." I asked an LSU Ag Center horticulturalist & apparently they don't reseed here. Or, he says that's not the way we grow tomatoes here. He says that we don't sit around & wait to see what has come up from last year. We sow inside about Feb 1, then 8 weeks later or around April 1, transplant outside. So I guess that he's saying tomatoes don't reseed in our area - that's the best I could get. I've gotten a package of 100 seeds of Small Fry from Willhite Seed in Texas, thinking that I could try WS with some of the seeds & see. In your WS faq you say to wait until the deciduous trees in my neighborhood have lost all their leaves & they have, just a few scattered leaves left for the wind to blow off. In general I always think that winter is pretty much over in my area by Feb 14 & there are only a few freezes after that. I'd like to WS cilantro & my Small Fry tomatoes. Can I start both Dec 21? It's good to read about your new puppy Emily, even if she did shred the seed pack. Thanks!! Oh, boy, do I hear you. For some reason, I've never been good at salads. I hear people talking about how much they enjoy chopping up the vegetables -- not me! Ruthanna, I'm going to try that lemon spinach salad. It sounds great. Here is the salad that changed my life, salad-wise. It's delicious, a little special, and unlike any other leafy salad I can think of, the leftovers keep nicely. I love to eat it with breakfast, too. I got it from Betty Rosbottom's "For the Gourmet" column in the Columbus Dispatch a couple of years ago and we have eaten it many times since. I even started growing kale, we like it so much! KALE SALAD WITH PINE NUTS AND GOLDEN RAISINS Makes 4 servings (sez she; I think more) 2 tablespoons olive oil 1 tablespoon lemon juice 2 teaspoons maple syrup 1 teaspoon Dijon mustard 1/2 teaspoon kosher salt Scant 1/2 teaspoon red-pepper flakes 1/4 teaspoon freshly ground black pepper 6 to 8 ounces kale (I use more; there's plenty of dressing) 1/4 cup golden raisins 1/4 cup toasted pine nuts Whisk together olive oil, lemon juice, syrup, mustard, salt, red pepper flakes and black pepper in a nonreactive bowl. (The dressing can be prepared 1 day ahead; cover and refrigerate. Bring to room temperature 30 minutes before using.) Remove and discard the tough stems and center veins from the kale leaves. Then cut the leaves crosswise into 1/2 inch-wide strips to yield 6 cups well-packed kale. (I often just chop up the leaves rather than worry about pretty strips; it's a LOT quicker.) Place the dressing in a salad bowl and whisk well. Add the kale and toss to coat greens thoroughly with dressing. Divide salad evenly and mound on 4 salad plates. I have been to the Peacock Alley restaurant in Waldorf Hotel many times. Never thought of ordering the Waldorf Salad. In general I donÃ¯Â¿Â½t believe in ordering salads when you go to a good restaurant. How much skill does it require to make a salad? I do order seafood salads once in a while. Sharon, my small school had 3 rooms, Kindergarten though 8th grade. We didn't have a cafeteria, or a gym, and the PTA moms brought hot plates in on Wednesdays and that was "hot dog day". For 25 cents we could buy a hot dog and a cookie, homemade by someone's Mom. Milk was delivered to the school, it was 3 cents for chocolate, 2 cents for white milk. I didn't learn about school lunches until high school. When my girls started school, we lived two blocks from the schools, the Elementary, Middle School and High School are all in the same "complex". Closed campus and no one was allowed to leave school grounds, they'd get in trouble for walking home for lunch! Yes, I remember the pineapple ring with a maraschino cherry in the middle. Grandma used to cut a banana into 3 sections, use a toothpick to put the maraschino cherry one top and stick it in a pineapple ring. Voila! A candle. On a leaf of iceburg. LOL Didn't make me like bananas either. She also made some kind of a bunny out of a pear half, raisin eyes, something for ears and a marshmallow tail. Interestingly enough, I remember the lettuce leaf as being more for presentation, we were never encouraged to actually eat the stuff. Living on a farm we ate vegetables and we ate a lot of them. I like nearly all vegetables, but I've never learned to like lettuce, I merely tolerate it. That is probably why I like Woodie's 7 layer salad, there's so much other "stuff"! I used regular sugar, but when comparing various recipes, some said you could substitute splenda.

Sure the Splenda pkg would tell the conversions.

Wow--does that look good! Not surprised there's none left. I had copied the recipe to try. but it only called for 1 pound each of the grapes. Looks like there was plenty of "stuff" on the grapes, though. Gosh, I have to make it soon!

I thought for sure you'd made something with the rhubarb. You fooled us!!

Patti, I compared recipes and decided that 3 lbs total was the right amt of grapes.

We had 15 plus at our luncheon and lots of food.
Was really pleased my pan was completely empty.

DO NOT stir the brown sugar! Just sprinkle it on top with the pecans.

I make another version.Cut green grapes in half,chopped peacans,sliced m.cherries,small marshmallows,whip cream.
2 apples chopped
1c grape halves
1/2c.mar.cherries
1/2 c.peacans
1c.little marshmallows
2c whipped cream or cool whip.mmmmmmmI dont measure usually.
You know what would save time in your recipoe at the grocery store they now have cinnimon ,pecan pie flavored peacons,nuts .

I make a chicken salad with green grapes and mandarin oranges. I made a batch 2 weeks ago and ate it all myself.

Oooooh this gives me an idea for our Fathers Day picnic this year. My dad turns 70 on Fathers Day.

I was wondering about cutting the grapes too. Do you think it would make the cream cheese runny? Also did the nuts get chewy after refrigerating them?

It sure sounds yummy!

I thought about halving, but did think it might get runny.
Just be sure you get the whole grapes good and dry, before adding the cream cheese.

Nuts do not get chewy. Be sure you brown them to bring out their flavor. And make sure they are cool before adding to the brown sugar.

Looks good Glenda. I have never had a grape salad before or even heard of it.

Glenda, I made the best rhubarb pie I have ever tasted this spring using Ann T's rhubarb pie filling recipe on the Cooking Forum. I can't make pastry like hers so I used a Tenderflake deep dish ready made pie crust top and bottom. So good I didn't want to share the pie with anyone. LOL I've made a lot of rhubarb pies in my day too but this was the best.

Ok, thanks for the tips. Our market is loaded with grapes right now too. This sounds perfect for a picnic.
