Waldorf Salad

So, I saw a dining show and the hostess served Waldorf Salad, so I googled it and I am interested but I know my family wouldn't be. I am inviting a neighbor over for his 65th as he is like a grandparent to my kids and want to make a very nice dinner. Would Waldorf Salad work as a course? Is it mainly a lunch thing? I plan on making homemade canelonni for a second coarse, chicken marsala for main. So for the first, I wanted to do a salad or soup, so a little help on this Waldorf Salad thing would help me out a bit. Thanks. I usually make something my kids and husband don't like for guests because there is so much of everything else it doesn't matter if they like it or not.
