What's For Supper?

I am heating up my electric grill and I am going to have a veggie burger and probably a glass of milk. I am tired from shopping and don't feel like fixing myself much. They had a good price on very nice blackberries at Meijer today, 6 ounces for $.50, regular $3.99. Strawberries were nice and at a good price as well as nectarines and blueberries. We have a lot of fruit. I fixed several containers of fresh fruit salad ready to send along with my husband to his work tomorrow so they can eat on them for about 3 days or less. The weather was great, a bit over cast most of the day but a nice breeze and not humid. Now we are to have some rain move in. Hope it isn't a lot. Are you thinking about your evening meal? Hope it is a good one.

Already done. Toooo hot to cook later in evening. Fried fish, potatoes, and shrimp fetticunne (sp?). Oh, and cut up cukes. Startchy and fattening, but good.

Sisters night at the Home with Annie. It was my turn to bring the fast food to her. She wanted McDs this time. She loves chicken so I got a grilled chicken for her, an angus burger for me. We split fries and she had a strawberry shake. We then went to her room to go through her closets and dresser drawers. We do it at least twice a year, tossing old stained/worn/faded items, checking to see what she needs, etc.

We're getting ready for our 21 year-old granddaughter's visit. She flies in Saturday morning and we'll pick her up in Orlando. She's just a sweetheart and I haven't had her all by herself since they moved from Florida when she was 3 or 4. Guest room is ready and just need to do some last minute clean-up. I'm so excited!! She's a great photographer and takes all the pictures for her college yearbook. She made me a Mother's Day card which was a collage of nature photos she'd taken. She's going to give me lessons while she's here so I can post pictures. Paid bills, made out a grocery list and a list for Wal-Mart. Did the ususal daily stuff--pick up, make the bed, etc. Dinner tonight is a chicken breast that's in the crockpot right now with a tarragon mustard sauce. We'll have that with rice and DH's favorite--peas. Still have picnic cake. I should have brought it to the KT!!

Your chicken sounds good, jasdip. I brought some Napa the other day, for a stirfry. I like it, when I can remember to pick some up. Hi, Kath....I'm so sorry that you resort to frozen dinners; that's not much fun and not healthy, if you do it often. I think that "just you" is important! But I have friends who stopped cooking entirely the minute they could. I appreciate that. Sounds like my kind of meal, satine! Almost any kind of meat tastes better with a salad under it, lol. Ellendi, leftovers are a treat, aren't they? Most of my meals are planned with leftovers in mind.

Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-).

Wow, what scrumptious sounding meals! Shirley, so nice to hear from you; I hope that you're doing well. I'm a fan of cabbage myself, no matter how it's prepared, including raw. That stuffed cabbage sounds good, I may have to dig out my recipe and make a batch before hot weather gets here. Your chicken sounds good, jazzy. Aren't you glad that you had some leftovers? Texas Gem, I haven't had a taco salad in years, but I used to eat them all the time. And loved them. What a great combination of flavors and textures! Oh Raven, I hope that you had a relaxing evening! You must be absolutely exhausted between all of the stressful traveling and family events. And the illnesses, oh my. Mor, I had to look up flageolet beans and I'm intrigued. Tell me what you like about them. Supper sounds so good. grainlady, as always, I'm in awe. I've often wondered what your kitchen must be like. I'm having blood drawn today and can't eat anything.....why the heck am I reading about this wonderful food? My tummy is growling like crazy, lol.

Leftover chicken, fresh fruit and veggies and cake. We had house guests for a couple of days and I must get rid of these yummy leftovers. Bettye/AZ

We had BLT's and pickled beets last night. Too hot to eat anything heavy. Lemon bars for dessert, later.

We had my generic Mexican casserole. Large soft taco shell in the bottom of a casserole dish, then a layer of refried beans, then meat with taco seasoning, then a thick layer of cheese. Top with another soft shell and put canned tomato soup on top to keep the top soft while baking. Sprinkle on another handful of cheese. Once baked, top each serving with lettuce, tomato, onion, and green peppers and Dorothy Lynch salad dressing (or salsa if preferred). Sour cream adds a great touch but we were out last night.

I am trying to think of what to make tonight. I just went to the grocery store, but not sure what we're in the mood for. Maybe some Tilapia, rice & veggie?

I have country style ribs in the Nesco. Will probably roast some potatoes to go with it. Maybe a salad or canned veg? Depends on the ambition that's left. It's cool and breezy here today so something hot will hit the spot.
