A Marie Callender frozen dinner: Mongolian Beef. It was ok. I don't do a lot of cooking anymore since it's just me. Had Panera Bread for lunch, was really good: Autumn squash soup and half a turkey/apple/cheddar. Got an apple with it instead of the hard-as-a-rock bread that I don't eat anyway. The soup was really sweet so I didn't finish all of it but it was good.

I had a green salad and summer sausage with pita chips and hummus.

I had leftover quinoa/kale salad, leftover roasted potatoes and a bit of the Trader Joe's fried rice I made for my DH. I scramble a few eggs into the rice and call it dinner.

Your chicken sounds good, jasdip. I brought some Napa the other day, for a stirfry. I like it, when I can remember to pick some up.

Hi, Kath....I'm so sorry that you resort to frozen dinners; that's not much fun and not healthy, if you do it often. I think that "just you" is important! But I have friends who stopped cooking entirely the minute they could. I appreciate that.

Sounds like my kind of meal, satine! Almost any kind of meat tastes better with a salad under it, lol.

Rhizo re: leftovers. I couldn't eat if it weren't for leftovers. I always make too much, or make meals intentionally for leftovers. Everything from scalloped potatoes to baked ziti (I've got 2 meals for each of us in the frig now), etc etc.
