What's For Supper this Tuesday?

We are just going to have bacon, lettuce and tomato sandwiches and iced tea. There is still pineapple peach dump cake he can eat. I went to the grocery store today and a lot of the shelves were really bare. It was getting that way last week. I don't know why either. It is a beautiful sunny day here in Central Indiana. So what are you having to eat this evening?

Corned beef (from the can) potatoes, carrots all cooked together. Strawberry cheesecake pie for dessert.

Not sure. Leftover corned beef and cabbage? Corned beef hash? BLT's sound good too. Or pork steaks and a new noodles romanoff recipe in my "to try" pile.

Chicken fried steak and gravy,mashed potatoes and green beans.I bought a couple of round roasts the other day on sale and am cutting off steaks from them.My back is killing me so I may change my mind before time to cook.LOL Also have some fresh strawberries that I sliced and sugared last night.Maybe strawberry shortcake for desert.

Last night I actually got to come home after 8 hours of work. Usually it turns into a 12 because we're short. Didn't feel like making dinner so I swung by and picked up Alex and we went to a new-to-us restaurant. He had fried shrimp basket and I ordered a grilled cheese and fries, not supposed to eat bread or potatoes on my diet, but am allowed one day off. It was so good! I tasted a few of Alex's shrimp too, and they were excellent and piping hot right out of the deep fryer. Not sure what I'm having tonight. Not much probably. I no longer have an appetite at all, thanks to the meds I'm on.

Well for lunch, I had Mrs. Murphy's Meatballs. They are a kind of porcupine meatball I found online with onion, cabbage, celery, green pepper and rice in the meatballs. I used Campbell's Vegetable Beef soup (ABC noodles) rather than the tomato soup to cook them in. I like that flavor better, which a friend used in her porcupine meatballs eons ago. You put them in the frying pan with the soup and a 1/2 can water raw. Cook them 45 minutes on low, turn them over for another 45 minutes, add a little more water if necessary. Nice lunch.

Yes, that sounds like our noodles, because we add baking powder to dumplings to give them some 'fluff', then drop by spoonfuls onto hot soup or stew (often bean soup, in my MIL's case, which I did not find appetizing.) The source I read said that rivals are pinched off and dropped into stock, which made me think of dumplings. We roll out noodles. My father's family had friends, of German descent, who called the extruded flour and egg mixture 'strudels' or maybe 'stroodles'--I don't know how they would have spelled it. He said they dropped the dough into boiling water and served it plain. He was always disappointed to be asked to dinner on the day it was served, because although his family was not well off, they always had meat stock for their noodles! ETA, I'd always seen 'strudel' presented as a German pastry.

I threw some chicken breast strips, a couple cans of cream of chicken soup and a box of Uncle Bens rice in the crockpot at noon. And will open a can of corn. We will eat when it gets done....but it is on hi, so I am assuming it will be ready about 6:30.

DH's having left over chicken spaghetti soup and a salad and I am having seared ahi, a baked potato and a green salad.

It's turned chilly again here in Texas (okay, it's in the 50's but that's chilly for us) so we're having pork tenderloin stuffed with mushrooms and spinach, Virginia spoon bread, roasted carrots, and green beans. I'll chop some apples, add some of the cranberries from the freezer, and some pecans for a salad. I baked gingersnaps this morning, so we may have a few with our after dinner coffee. Did I mention that I like to cook when it's colder?

Liver and onions here; I've been munching on a lovely red sweet pepper all afternoon, so I will skip the salad or other vegetables. I've been hungry for liver all day.

In real life we're having bean soup (Great Northern) and corn bread.

It's a cold, damp, dreary day here and with Sue (bigbaby) in Texas I'm chief cook and bottle washer. It sounds like a good day for chicken and dumplings.

Forget tonight, it will be some surprise leftovers.

Last night we had Welsh Rarebit.
It was made with peas, onions, yellow pepper and ham in the creamy cheese sauce over toast. YUMMY!
That is another Irish/Scottish type meal.

Since we have been talking about Irish food, I have discovered that my mother was very Irish. I was only 19 when she died, so we really hadn't "talked food" very much, but all these things mentioned are regular foods from my childhood.

I'm going with Patti! I never get to fix liver and onions and I'm always afraid to order it when I go out.Nothing worse than bad liver and onions!LOL
DDIL is working the night shift for the next couple of days and has to leave at 6 so I need to have dinner ready by 5:30.She suggested spaghetti and meatballs so that's what I'm fixing.Frozen meatballs from Wallyworld,canned sauce(or I may just make my own).Quick and easy.Guess I'd better get started!LOL
