It's Supper Time on Tuesday!

What great meal are each of you fixing for this evening? I shall fix my husband his oatmeal and applesauce. I am a bit under the weather so just had a little chicken pot pie. I know all of your meals are much tastier than what we are having.

Stay home all day kind of day. Cold, windy! Had my white chili and cooked up corn bread in my cast iron skillet. Friend's husband dropped by, while his wife was receiving chemo treatment. Had plenty of chili for him and leftover cornbread.

Leftovers graced my table tonight.... split pea soup, a chicken patty, and a small amount of a waldorf salad.

I'm trying two of my Thanksgiving sides. I have to bring make-ahead mashed potatoes to work this Thursday, and I want to make bourbon glazed carrots for next week. I've done neither before! I've read the potatoes can be made three days ahead of time, and it'd be two if this turns out. So I bet I'll be eating potatoes and carrots tonight!

Guess I forgot how old I am as far as energy level goes. I made homemade beef vegetable soup and corn muffins. Time was when that wouldn't tire me at all but tonight I am worn out.. Anyway it was very good and I can have several more meals from today's cooking. Maybe share with a neighbor, too. I think there are very few folks here who actually cook. I've been busy preparing lunch for 10 neighbors tomorrow. Right now I'm waiting for the molded gazpacho salad to set enough to add the veggies. Still have to make the avocado dressing for it and have to make the raspberry sauce for my Charlotte rouse. Shrimp and asparagus casserole is sitting in the garage fridge, ready to grand the table is set. I just heated up some pizza for DH and I'm snacking on some butternut squash hummus. Will watch Jeopardy then get back to work.

My husband came home this afternoon to move a big winch that he had sold. He borrowed a trailer to haul it on, and it was a wreck....most of the bed rotted out or missing. Had four tires....but one of those was missing. The winch weighed about 1000 lb....big like for a Gulf shrimp boat. He managed to get it loaded and then bottomed out trying to drive out. I pulled him out with my truck and then when he went over the wooden culvert at the front gate, pulled some of that up too and it got stuck under the trailer. I say all this to say that it makes me a nervous wreck to help him because he doesn't know the word "stop" and he takes too many chances. Then I had to follow him with my flashers on because the trailer had no tail lights. Once he got it unloaded, had to follow him back to where he had picked up the trailer. It was well past dark by then. He went back to his boat to go shrimping in the morning and I came on home. I stopped at Sonic and got a double meat hamburger for me and one with just meat and bread, for Gertie, my dog, that rode along with me.

I had to take the dog to the vet for her shots and heartworm tests she is fine but not happy about them touching her private areas! Lol and she let them know it she was very vocal.

I have a couple of little ribeyes and baked potatoes for dinner tonight.

Im making a chicken minestrone soup, with kale and other veggies, and garbanzo beans. I'm going to spice it up a little with hot pepper flakes.

Robert will have his with crusty garlic bread.

Right now we're enjoying a couple glasses of wine by the fire. It's so cold outside!

I breaded some chicken breasts and baked them. Boiled cauliflower (we have just discovered how good cauliflower is, boiled. I aways saute it, which is so delicious. As long as the cauliflower isn't cooked to mush, we really like it boiled.

I also cut a sweet potato into fries and roasted that. It's so hard for me to believe that it's so much more healthy than regular potatoes. I find it so sweet, almost too-much so.

I checked out the freezer and found out I have taco meat ready to heat, so that will be it tonight. Miraculously, I have all the other fixings for the tacos!

Cleaning out stuff getting ready for the moving van. Sausage in the freezer and tomato sauce from this past summer (last of it). Pasta and finish a bottle of red wine.

Get rid of that wine, Jim...less packing! I'm making a huge pot of Manhattan clam chowder but it's not ready for tonight. We had left over chili. Tomorrow, clam chowder. It smells really good.

Given that today is Mardi Gras I decided to make a Chicken & Sausage Gumbo and White Rice. Although as I was making the roux, it splashed several droplets of super hot oil onto my hand and although I ran cold water on it as quickly as I could, it still seems like it'll be an annoyingly painful burn.

We had Bob Evans sausage (a So.Ohio specialty) and homemade hash browns, with green beans sauteed in the sausage pan. This afternoon I made three varieties of Pioneer Woman's oat bars--peach made with homemade preserves, molasses and ginger, and peanut butter. Yum.
