Another miserable, gloomy, rainy day here. I have turkey carcass soup that I made from the holiday bird. After cooking the carcass down to get all the meat off, there is the job of culling out the bones, skin, etc. Then you have to strain it, cool it, dip off the fat and then make soup. The whole process has made me resolve only to deal with a turkey breast the next time.

I am doing the same as Sue with the turkey carcass. But that will be for Turkey and dumplings tomorrow. Tonight is ham steaks, fried taters with bacon and onions, corn, and dinner rolls.

Made minestrone soup today and served with warmed bread. It's been raining all day with more rain coming tomorrow - a perfect night for soup :)

Once again a nice healthy meal. A baked sweet potato and some chestnuts. After that I had a bit of trailmix like snack. Not much of an appetite.

Guess I forgot how old I am as far as energy level goes. I made homemade beef vegetable soup and corn muffins. Time was when that wouldn't tire me at all but tonight I am worn out.. Anyway it was very good and I can have several more meals from today's cooking. Maybe share with a neighbor, too.

I think there are very few folks here who actually cook. Maybe they are the smart ones

Took time this afternoon to listen to an a capella group from the local high school. Amazing singers!

I made a chicken and vegetable stir-fry with toasted almonds and sesame scented rice.

Seniorgal, I'll bet your soup was wonderful, and how nice to have a visit from the high school singers!

Prep, your soup sounds great, too. It's supposed to turn cold again this weekend and I'll be more inclined to make a batch of minestrone, one of my favorites.

Hubby works long hours this time of year. I made baked chicken with butter braised leek mashed potatoes and a creamy mushroom sauce. Steamed green beans as a side. It was good.

Applesauce meatloaf, whipped potatoes, leftover green beans for me, honeyed carrots for DH.

Dh had a dinner meeting so it was fried eggs, potatoes and broccoli for me.

I had bridge tonight so grabbed a bag of the turkey soup from the freezer. DH is not a chicken or turkey soup lover but he just passed by on his way to bed and said the soup was delicious. Didn't have any egg noodles so put some bow tie pasta in it. I thought it was pretty good.

Sweet Betsy -- turkey carcass soup makes the whole roaster so worthwhile! (Extra breast makes for great catfood!)

Last night -- a country style rib with mustard sauce, and some leftover T-day stuffed delicata squash.

Anyone made a pumpkin crunch cake? I tried it....YUM!!!!!!
