Supper Time on Tuesday!

I will post a little early as I may not be down here later on. Tonight is the VFW $4.00 meal and I am ordering the big breaded tenderloin sandwich, cheese potatoes and coleslaw. You can get a lot of condiments to put on it. I will have them get me, lots of lettuce, tomatoes and some Miracle Whip. They can toss in some pickle slices too. Daughter Cheryl and her husband Kevin will pick them up and we shall eat together in the living room as my husband does not come down the stairs to eat. Oh, will also serve the banana cake I baked today. How about the rest of you, what's for supper?

I made Zuppa Toscana (tuscan soup) tonight. It hit the spot on this cool, windy night--just ahead of a big rain event.

we get these chicken tenders (raw and un-breaded) so have those on and will have "french-fries" and slaw... will add some bbq sauce...

have you made out your shopping list for thanksgiving? we did today, along with a few other items...3 stores to go to...

I'm trying two of my Thanksgiving sides. I have to bring make-ahead mashed potatoes to work this Thursday, and I want to make bourbon glazed carrots for next week. I've done neither before! I've read the potatoes can be made three days ahead of time, and it'd be two if this turns out. So I bet I'll be eating potatoes and carrots tonight!

Oh, ravencajun that looks so good! We had spaghetti and meat cubes, with sauteed purple and green cabbage, lentils, and green beans. I was busy baking walnut Zimsterne cookies, and didn't want to take time to roll meatballs, so I patted the ground beef mixture out in a baking dish, and cut it in cubes when it was baked. I was also too lazy to roll the Zimsterne dough and cut out the stars, so I rolled it into logs and sliced them into oval cookies. They taste the same. ;)

We were under the weather, tornado weather that is.... (although thankfully all we got was wind and rain). So I made something early in the afternoon that was portable in case we had to eat in the basement. I made a roast beef wrap (gluten-free) with chili lime mayo, pepper jack cheese and fresh leaf lettuce from the garden. As a side dish I made a pasta salad with the cutest little gluten-free pasta O's (anellini) - a little pasta and LOTS of veggies dressed with Olive Garden Light Italian Dressing and a couple shakes of McCormick Salad Supreme. Baked Crushed Pineapple for dessert.

Really hit the spot. I've been thinking about those salmon cakes for a week.To make a basic Hawaiian macaroni salad, you don’t need a recipe; just follow these guidelines: The pasta: Cook 1 pound elbow macaroni (for really local style, cook until soft and fat, but you can go al dente if you prefer). The flavoring: Stir in ¼ cup very finely grated onion. Not minced, chopped or sliced—grated. It should be liquidy (this is how they do it at Diner’s, a local eatery in Kalihi). The mayo: At least 2½ cups for real local style. But there are no rules, so use less if you like. Or more. The add-ins: Carrots, watercress, celery, hard-boiled eggs, pickle relish (try some frozen, thawed peas) whatever suits you. The finale: Salt and pepper, to taste. Stir well; refrigerate. * I don't use pickle relish. I add some grated carrots, dill pickle (diced fine) some grated cheddar cheese and sliced black olives.

My husband didn't come home, so I didn't cook. I had a ham sandwich on white bread. Jody doesn't like white bread, so I always buy wheat bread. But, I bought two cheap loaves for my pet pig, so I kept a couple of slices and made a ham sandwich. I made tartar sauce a couple of days ago...mayo, stuffed olives and Claussen dills...and it is really a good sandwich spread, so had that on my sandwich. I found a recipe I wanted to try. I bought a little cook book put out by the extension service in Galveston Co. They have a pecan show and a contest for the best pecan recipes. I found a recipe for jalapeno cornbread with toasted pecans and bacon. (Also has sour cream and cheese in it). I was going to make it tonight and make shrimp gumbo, since I fry bacon and use bacon grease for the roux....so I will do that tomorrow. I was late getting in the house tonight, by the time I finished feeding all the animals. It takes at least an hour and a half to feed...so by the time I got in....I was glad I didn't have to cook.

Just cut up a huge head of cauliflower and minced a whole bulb of garlic to make 'garlic roasted cauliflower'. I think that will be the side to go with burgers with blue cheese on a bun. A few carrots and celery sticks will make it to the table too.

We just finished a skillet of sauteed vegetables, black beans, diced tomatoes, some RoTel. Served it with brown rice and pearl barley and a chicken leg.

I'm hungry and everything here sounds good! There's leftover roast beef, so I'll probably make some kind of beef sandwich with a variety of sides here.

I made ham & bean soup last night.... and stuffed pepper soup last weekend. I'm thinking it would be fun to make a different soup every week. :)

We grilled turkey burgers and I put some sliced onions and peppers in the grill basket to go over them. Also made some zucchini patties....minced onion and egg with shredded zucchini, fried up in a little ghee.

Oh, this was soooo good. Had dinner cooked for me. :) Have a friend stay here, while she is getting ready to have neck surgery... and her husband cooked for us.

YUMMY! stir fry with beef, broccoli, peanuts and of course, garlic, all over rice. Tomorrow I make German Rouladen, Rotkraut mit Kartoffeln. ;)
