Comments (7)Tuesday is sandwich night. I made gluten-free dill/onion sandwich rounds this morning and sloppy joes (with ground turkey) for dinner. We'll have open-faced sloppy joes (toasting 1/2 a bun each) and will top the sloppy joe with shredded cheese. Carrot, celery sticks, and bread and butter pickles (we ate our greens for lunch) and a baked apple for dessert. Comments (18)We were under the weather, tornado weather that is.... (although thankfully all we got was wind and rain). So I made something early in the afternoon that was portable in case we had to eat in the basement. I made a roast beef wrap (gluten-free) with chili lime mayo, pepper jack cheese and fresh leaf lettuce from the garden. As a side dish I made a pasta salad with the cutest little gluten-free pasta O's (anellini) - a little pasta and LOTS of veggies dressed with Olive Garden Light Italian Dressing and a couple shakes of McCormick Salad Supreme. Comments (14)I mentioned on the Mother's Day Menu thread that we were having sub sandwiches on homemade bread. When I cut the loaf open, I take some bread out of the middle, to leave room for a stack of meat, cheese, and fixins'. I save the surplus bread, so tonight I cubed it, then made a breakfast casserole, with some of the left-over ham, and cheddar cheese. Served it with steamed asparagus (homegrown) and broccoli (on sale at Kroger). My son-in-law picked up ice cream on his way home, but I passed on that. Comments (20)Salmon patties, made with canned salmon, a little minced onion and green pepper, and dusted with corn meal before browning in ghee....we like them a bit crunchy on the edges. Made a quinoa salad this morning with all kinds of fresh, raw veggies including a bit of seeded jalapeno for some nice heat. It's been marinating in a light vinaigrette all day. I'm going to slice a juicy tomato from the garden just before we eat and serve everything with a bowl of tzatziki with fresh dill on the side....See More
