So sorry Sue about your hens. I know how well you cared for them.

I am having veggies and more veggies for dinner. I took a fresh veggie tray to a dinner Friday night and had 90% of it to bring home. I have been munching on them since and tonight steamed what was left and I'll have those with a cold beef and celery salad. I may not eat another veggie for a long time!

I went to subway for the buy one get one free deal so I have a 6 inch subway club left and I will give hubby the 12 Inch subway club. We also have some leftover smoked ribs from last night. I am not cooking!

When I'm not sure what I want, I will have soup (which I keep in the freezer in single-servings), or make a quick recipe of potato soup.

Otherwise, I keep a meal schedule for each day of the week by genre/theme so I keep on track and just fill-in-the blank. I never had good luck doing complete meal plans, but with a general target (theme), I can quickly develop that meal using items in the freezer, leftovers, store loss leaders, things that need to be used....

Monday: Big Meal - Large cut of meat with all the trimmings. Meat used for sandwiches, leftovers, some for the freezer, carcass/bones for making soup/stock.

Tuesday: Leftovers or Sandwiches - Leftovers may or may not take on a different look. Leftovers may be found in the freezer or refrigerator from another meal.

Wednesday: Stir-fry - Good use for any kind of meat, vegetables, leftover rice, cooked grains or beans.

Thursday: International - Usually something with pasta or a tortilla.

Friday: Vegetarian - I keep a stack of homemade bean burgers in the freezer for a quick meal; lentil chili over a baked potato, and we also like to have breakfast for dinner occasionally.

Saturday: Soup and/or Sandwich (sandwich may be a quesadilla, sloppy joe, wrap....)

Sunday: Homemade pizza (a good way to clean out the refrigerator) or in the summer a dinner salad - which uses a lot of the same ingredients. I also make a "stacked pizza" on corn (or flour) tortillas that are ready in 6-minutes.

had clam chowder and cornbread tonight...one of our faves...

I ended up having a sandwich from leftover turkey, Cheryl baked this week and some pickled beets and iced tea. Just cooking for myself I have lots of stuff to choose from but sometimes don't want it. Husband only eats oatmeal and applesauce and an Ensure. Sometimes a soft cookie. My freezer is full of things, lots of black raspberries and peppers and things.

grainlady...saw this recipe in a taste of home...they made tomato soup but made miniature grilled cheese sammies and cut into large crouton size and tossed on top...it looks so good...didn't say what kind of cheese or bread,but i'm sure it had to be pretty hearty...and thin sliced...

Tuna turnovers, yummy!

I made chicken thighs with a cilantro, garlic, butter, white wine sauce & Birdseye frozen "California style protein blend" vegetables. The vegetables had a spicy flavor to them. Froze two servings to take to work over the next couple of days. Have another for breakfast in the morning.

Went shopping at the mall. We had a late lunch/early dinner at The Cheesecake Factory. I had a dinner from their skinny menu. Steak medallions, mashed potatoes and asparagus. DH has the Oriental Chicken Salad.

We skipped the cheesecake!

Just made sloppy joes and coleslaw and finished leftover sweet potato fries. Really good!

We had some bean and cheese enchiladas, beans and rice, chips.

I made a quick sesame shrimp stir-fry with g. peppers, onions, celery, broccoli, carrots, ginger, and a handful of peapods from the garden. Served over brown and wild rice flavored with a hint of sesame oil.

Oh Sue, I'm so very sorry about your chickens!! That's twice this happened to you. Will you get more before the winter, or perhaps wait till the spring?

We had breakfast for dinner last nite. French toast with a sauce of simmered apples in butter and brown sugar sauce.

Would love to have the "homemade bean burger" recipe, and the bean and cheese enchiladas. Obviously I love beans.

Grilled pork chops, peas, and dirty rice. Ended with cherry cobbler.

Last night: stir fry with beef, orange bell pepper, and several cherry tomatoes.

I am sorry about the chickens, 11 is a lot to lose.

I'm so sorry to hear about your chickens. I know they were special to you. Keeping them safe and free range has it's challenges.

I was out of kernel corn, couldn't make tamale pie. Was out of broccoli, couldn't make the quiche like I wanted. Ended up making sausage & beef meatballs because I had all the ingredients. I have sandwich rolls in the freezer. Now we have left overs. :0)

Sorry to hear about the chickens! Eleven sounds like enough for a pack of coyotes.

We'll have spaghetti, salad and a veg when I get to it, which should be now.
