Supper Time on Tuesday!

My main meal earlier was some home made bread I made today, to go with my homemade beef vegetable soup and I also made myself some potato salad. I had iced tea to drink.

I put a lot of different vegetables into my potato salad, had some raw veggies I brought home from Thanksgiving and so I chopped some different things up and put in it. Sweet peppers, celery, pea pods, carrots, broccoli, cauliflower and of course I put a bit of onion and hard boiled eggs. I always microwave my potatoes and then peel and chop them. What did you have for your main meal today?

Marilyn, I made bread today too. Was going to make pasta e fagioli for dinner, but ended up getting Thai take out. I'll cook beans tomorrow for the soup.

Raven, I love mahi mahi ... just about any way. Do you blacken it outdoors?

Our main meal will be leftover tamale pie and green salad with lime/cilantro salad dressing. It's only 2:18 here, so a ways to go until dinner time.

I've got to say, there are some great sounding meals here tonight! Raven, your crawfish meals always look so delicious, but much to my sorrow and surprise, I don't like crawfish! And I don't know why; my mouth waters when I look at those steamed crustaceans. I've devoured piles of crabs, shrimp, oysters, mussels, clams, and all manner of fish, but crawfish just don't make the cut. It's a supreme disappointment to me, lol. I'm looking foward to another visit from some friends in coastal SC, where I used to live. They're bringing three or four bushels of freshly gathered Beaufort oysters. I'll have a Lowcountry oyster roast for my friends here, and keep some aside for a stew the next day.

We were under the weather, tornado weather that is.... (although thankfully all we got was wind and rain). So I made something early in the afternoon that was portable in case we had to eat in the basement. I made a roast beef wrap (gluten-free) with chili lime mayo, pepper jack cheese and fresh leaf lettuce from the garden. As a side dish I made a pasta salad with the cutest little gluten-free pasta O's (anellini) - a little pasta and LOTS of veggies dressed with Olive Garden Light Italian Dressing and a couple shakes of McCormick Salad Supreme. Baked Crushed Pineapple for dessert.

My husband didn't come home, so I didn't cook. I had a ham sandwich on white bread. Jody doesn't like white bread, so I always buy wheat bread. But, I bought two cheap loaves for my pet pig, so I kept a couple of slices and made a ham sandwich. I made tartar sauce a couple of days ago...mayo, stuffed olives and Claussen dills...and it is really a good sandwich spread, so had that on my sandwich. I found a recipe I wanted to try. I bought a little cook book put out by the extension service in Galveston Co. They have a pecan show and a contest for the best pecan recipes. I found a recipe for jalapeno cornbread with toasted pecans and bacon. (Also has sour cream and cheese in it). I was going to make it tonight and make shrimp gumbo, since I fry bacon and use bacon grease for the roux....so I will do that tomorrow. I was late getting in the house tonight, by the time I finished feeding all the animals. It takes at least an hour and a half to feed...so by the time I got in....I was glad I didn't have to cook.

Salmon patties, made with canned salmon, a little minced onion and green pepper, and dusted with corn meal before browning in ghee....we like them a bit crunchy on the edges. Made a quinoa salad this morning with all kinds of fresh, raw veggies including a bit of seeded jalapeno for some nice heat. It's been marinating in a light vinaigrette all day. I'm going to slice a juicy tomato from the garden just before we eat and serve everything with a bowl of tzatziki with fresh dill on the side.

I took the last of the turkey and broth that my son had brought over to me the day after Thanksgiving. I made a 'gravy' out of it. Put half in freezer for when he's home again. I put the turkey gravy over mashed potatoes, heated up some green beans. Voila, supper!!

Only me for dinner tonight. Earlier I thought I would make a tuna salad with apples and put it on Romaine lettuce, but I had a pretzel at the mall mid afternoon which spoiled my appetite. Starting to get a little hungry after reading this thread. Trying to get motivated to prepare something to eat.

For those of you still eating turkey I hope it had been frozen. Its been 5 days since Thanksgiving.... turkey is only safe in the frig 3 days going by what doctors say.

Jody was late getting home tonight and had eaten a bite at his deckhand's house, so I'm not cooking supper tonight. I have one more tamale left from two dozen we bought from a friend's aunt. I am going to have that, and put in an order for a few dozen more. I may have some ice cream too.

Squash and carrot soup and individual personal pizza with one's choice of toppings which included chicken, artichoke, olives, tomatoes, peppers and onion. Everyone does their own topping.
