Supper Time on Tuesday!

We just went into town and picked up our supper from the VFW. For four dollars you get beef Manhattan and that comes of course with mashed potatoes under it and a slice of bread and one side. We chose coleslaw. Also for the same price you could have had chicken tenders and two sides or breaded or wet tenderloin sandwich with all the condiments you want plus two sides. Pretty good meal. What good meal are you having?

oh it was good! dh and I reinvested in a crock pot (they were on sale at Costco) had a huge chunk of pork loin....so dumped it, mushroom soup and veggies of choice, and cooked it for several hours....well tonight the last chunk of the pork I sliced really thin, and bbq sauce...some salad and potato salad...yum-o....

I made a broccoli and ham quiche. Then since I was already making pie crusts....I made a pumpkin pie for dessert. After yoga, I stopped and picked up low calorie whipped cream. :0) Kind of an oxymoron....still very sweet and caloric!

Tuesday is sandwich night. I made gluten-free dill/onion sandwich rounds this morning and sloppy joes (with ground turkey) for dinner. We'll have open-faced sloppy joes (toasting 1/2 a bun each) and will top the sloppy joe with shredded cheese. Carrot, celery sticks, and bread and butter pickles (we ate our greens for lunch) and a baked apple for dessert. I also made some sweet potato chips in the microwave.

Really hit the spot. I've been thinking about those salmon cakes for a week.To make a basic Hawaiian macaroni salad, you don’t need a recipe; just follow these guidelines: The pasta: Cook 1 pound elbow macaroni (for really local style, cook until soft and fat, but you can go al dente if you prefer). The flavoring: Stir in ¼ cup very finely grated onion. Not minced, chopped or sliced—grated. It should be liquidy (this is how they do it at Diner’s, a local eatery in Kalihi). The mayo: At least 2½ cups for real local style. But there are no rules, so use less if you like. Or more. The add-ins: Carrots, watercress, celery, hard-boiled eggs, pickle relish (try some frozen, thawed peas) whatever suits you. The finale: Salt and pepper, to taste. Stir well; refrigerate. * I don't use pickle relish. I add some grated carrots, dill pickle (diced fine) some grated cheddar cheese and sliced black olives.

Today is my and hubby's 36th Wedding Anniversary. We ordered takeout from one of the local town diners.. I had the blueberry pancakes with a cup of tea, and hubby got the French toast, eggs and bacon.. Sometimes we just love having good ole breakfast food for dinner..

My husband came home this afternoon to move a big winch that he had sold. He borrowed a trailer to haul it on, and it was a wreck....most of the bed rotted out or missing. Had four tires....but one of those was missing. The winch weighed about 1000 lb....big like for a Gulf shrimp boat. He managed to get it loaded and then bottomed out trying to drive out. I pulled him out with my truck and then when he went over the wooden culvert at the front gate, pulled some of that up too and it got stuck under the trailer. I say all this to say that it makes me a nervous wreck to help him because he doesn't know the word "stop" and he takes too many chances. Then I had to follow him with my flashers on because the trailer had no tail lights. Once he got it unloaded, had to follow him back to where he had picked up the trailer. It was well past dark by then. He went back to his boat to go shrimping in the morning and I came on home. I stopped at Sonic and got a double meat hamburger for me and one with just meat and bread, for Gertie, my dog, that rode along with me.

My granddaughter made homemade minestrone last night, so we are having that for supper tonight along with some wonderful Italian bread with butter.

Salad of my garden greens, local goat cheese, tomatoes, cukes, and other raw veggies and slices of grilled salmon. Made fresh tzatziki for a dressing.

Beautiful day today and a nice evening for grilling.

Smoked sausage (turkey) cabbage, carrots, potatoes. mandarin oranges in jello for dessert. maybe an apple after a bit.

Chicken meatballs with gnocchi. Not great. It was a Hello Fresh meal. It sounded and looked so good but the taste was odd. It had sage, tart green apple slices, spinach and the combo of flavors was just too weird, even for me. I may try some of it in the morning and if I still don't like it I'll probably share the meatballs with the dogs. Then make one of the other meals they sent.

We had some work to do and didn't finish until late....so we each had a Marie Callender dinner. It was something to eat....that's about all I can say for it.

We had sausage and sauerkraut on a bun. Mustard, raw onions and diced tomatoes as garnishes. Leftover sweet and regular roasted potatoes.

Tuesday was cornbread, great northern beans with ham and cole slaw. Last night was grilled chicken breast, tossed salad and garlic bread.
