Supper Time on Tuesday!

I have been gone each day this week and will be the rest of the week too. We had a hard rain today for a bit and now the sun is out. Supper for me was an Arby's fish sandwich and a Jamoca Shake. A bit later for dessert I shall have a strawberry filled Paczki. I look forward to them each year when they are available. What's for you meal this evening?

Well, I just heated the left overs I had last night, so I guess it was left over left overs!

We picked up some really nice looking pork tenderloin medallions seasoned with Tuscany blend seasonings along the edges at Costco, he will put those on the grill since it's such a beautiful day. A fresh salad with sliced avocado, and some fresh baked bread sticks stuffed with olives and cheese.

Tuesday is sandwich night. I made gluten-free dill/onion sandwich rounds this morning and sloppy joes (with ground turkey) for dinner. We'll have open-faced sloppy joes (toasting 1/2 a bun each) and will top the sloppy joe with shredded cheese. Carrot, celery sticks, and bread and butter pickles (we ate our greens for lunch) and a baked apple for dessert. I also made some sweet potato chips in the microwave.

I mentioned on the Mother's Day Menu thread that we were having sub sandwiches on homemade bread. When I cut the loaf open, I take some bread out of the middle, to leave room for a stack of meat, cheese, and fixins'. I save the surplus bread, so tonight I cubed it, then made a breakfast casserole, with some of the left-over ham, and cheddar cheese. Served it with steamed asparagus (homegrown) and broccoli (on sale at Kroger). My son-in-law picked up ice cream on his way home, but I passed on that. A storm hit just as we sat down to eat, but my kitchen was nice and cozy.

My daughter cooked--stir fried vegetables with chickpeas, red quinoa, and left-over angel hair pasta. Last night I cooked--angel hair pasta with poached salmon, peas, and asparagus.

Really hit the spot. I've been thinking about those salmon cakes for a week.To make a basic Hawaiian macaroni salad, you don’t need a recipe; just follow these guidelines: The pasta: Cook 1 pound elbow macaroni (for really local style, cook until soft and fat, but you can go al dente if you prefer). The flavoring: Stir in ¼ cup very finely grated onion. Not minced, chopped or sliced—grated. It should be liquidy (this is how they do it at Diner’s, a local eatery in Kalihi). The mayo: At least 2½ cups for real local style. But there are no rules, so use less if you like. Or more. The add-ins: Carrots, watercress, celery, hard-boiled eggs, pickle relish (try some frozen, thawed peas) whatever suits you. The finale: Salt and pepper, to taste. Stir well; refrigerate. * I don't use pickle relish. I add some grated carrots, dill pickle (diced fine) some grated cheddar cheese and sliced black olives.

Only me for dinner tonight. Earlier I thought I would make a tuna salad with apples and put it on Romaine lettuce, but I had a pretzel at the mall mid afternoon which spoiled my appetite. Starting to get a little hungry after reading this thread. Trying to get motivated to prepare something to eat.

I shoveled 14" of snow @ 2 of my houses today. I was hungry! So I ate half my ribeye for lunch, other half for dinner. :0)

We're to get quite a bit of rain overnight and that will melt any remaining snow that we have. It's almost all gone :-(

I made a chicken pot pie, using biscuits for the topping. Another first, for me, I've never made pot pie. We finished up the coconut cream pie as well.

Lol, phyllis. We had left-over chicken and vegetables with mashed potatoes. I briefly thought about making noodles to go with the chicken, but I'm working on another baby quilt, so I didn't take the time. Still have a sheet pan of yummy whole wheat/oatmeal/chocolate chip cooky bars I baked on Sunday.
