All leftovers. Love nights when I don't have to cook.

Pork tenderloin, golden beets, roasted potatoes and asparagus.

I'm making some bean burritos and some of my black bean salsa with chips.

I took myself out for dinner. I had ribs, bake potato and zucchini. It was good.

I made meatballs with a sauce made of broth, soy sauce, worcestershire sauce, hot sauce and garlic. Thickened it and served it over rice. Frozen peas as the veggie.

I'm experimenting with Einkorn flour lately and decided to use it to make some tortillas. Dinner was bean burritos (yeah, jewels!), pico de gallo, and spanish rice. Everything was great!

Everything sounds so good, everybody! Lots of good cookin' going on.

I've been watching a PBS broadcast, "I'll have what Phil's having", a decadent, delicious travel plus food series. Phil Rosenthal is mildly irritating to me, but lovable, and so appreciative of the people and places that he visits. Tonight, he was in Italy.

Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-).

We made a big pot of potato, broccoli & cheese soup. Ate it with Ritz crackers.

I made cheeseburgers. Husband had sweet potato fries, I had shoestring fries. Hit the spot. We haven't had burgers in a while.

We had an overnight getaway to a bed and breakfast for which my wife won a gift certificate. The catch was it was only good for a week night. We brought bikes and kayaks and also used the hot tub and had a great time. The only dim spot was the dinner -- the dining room was closed because it was Monday, the only other option was the pub where it was half price burger night. The burger wasn't bad, but we asked for them to be cooked medium rare, and when they finally came they were more like medium well or well done. This morning's breakfast of Eggs Benedict more that made up for it.
