We had gorgeous weather all last week, and all of this week, it's cooler and drizzly with periods of snow flurries. Blech.

We had friends over for dinner on Saturday and I made extra chicken pieces. Coated with a spicy rub, then roasted (or grilled) then brushed with a spicy glaze. We had leftover chicken, rice, and sauteed corn. I'm going to have a small dish of ice cream in a few minutes.

Just finished a tasty taco salad. It was hot today and I didn't want to spend a long time sweating over the stove so I popped tortillas in the oven to make bowls and cooked up the taco meat real quick. Yummy!

I made both stuffed peppers and small amount of unstuffed cabbage. I ate a little of both.

I'd cooked a big batch of flageolet beans with ham a few weeks ago and frozen some....thawed a package for our dinner. I made cornbread, a green salad with dried cranberries and almonds, put out the rest of the blueberries I bought a few days ago. I think I need new muffin tins, my cornbread muffins didn't want to release....my tins are vintage non-stick Ecco and weren't the best quality to begin with.

We've had hail several times today, it's chilly breezy.

I spent Monday in the kitchen milling buckwheat flour and sprouted blue corn flour for bread (I'm making today) and einkorn for cookies. Made the cookie dough and refrigerated it for St. Patrick's Day Irish Oatmeal Cookies (will bake them tomorrow morning), made a gluten-free crumb crust and filled it with a layer of whipped cream cheese and topping it with a homemade blueberry filling since it was Pi(e) day. Hubby came home for lunch and I made him a stacked pizza (made on a tortilla and it takes 6-minutes to cook). The last thing I gave any thought to was dinner after being in and out of dishwater the whole day.... ;-)

Dinner ended up being roast chicken and a wild rice side dish (from the freezer), gluten-free drop biscuits (from the freezer) and I added one of our favorite salads - Orange Cranberry Pecan Mixed Greens Salad with a homemade dressing, and Blueberry Pie for dessert. The freezer to the rescue, once again..... :-)

Wow, what scrumptious sounding meals! Shirley, so nice to hear from you; I hope that you're doing well. I'm a fan of cabbage myself, no matter how it's prepared, including raw. That stuffed cabbage sounds good, I may have to dig out my recipe and make a batch before hot weather gets here.

Your chicken sounds good, jazzy. Aren't you glad that you had some leftovers?

Texas Gem, I haven't had a taco salad in years, but I used to eat them all the time. And loved them. What a great combination of flavors and textures!

Oh Raven, I hope that you had a relaxing evening! You must be absolutely exhausted between all of the stressful traveling and family events. And the illnesses, oh my.

Mor, I had to look up flageolet beans and I'm intrigued. Tell me what you like about them. Supper sounds so good.

grainlady, as always, I'm in awe. I've often wondered what your kitchen must be like.

I'm having blood drawn today and can't eat anything.....why the heck am I reading about this wonderful food? My tummy is growling like crazy, lol.

Everyone's suppers sound very good. I have not done much cooking at all as I have this terrible cold and cough.

Rhizo, I'm no bean expert other than I like them. I find the flageolet cook up buttery, creamy, tender - I soak them overnight in cold water, the refrigerator, before cooking them and somehow end up with a 'no gas' main course of beans that DH once would have said not possible. TMI I'm sure, but that could sometimes happen with great northern or pinto ;)

I made those cheesy chicken enchiladas that someone recommended on the casserole thread. Served them with black beans and rice. Very good. I got lazy and just made a casserole instead of wrapping individual enchiladas. It was like eating a hot dip because I ended up using only three tortillas.

I had a nothing kinda night and my DH and son made a Patty Melt and fries.
