Potatos

I just got back from the grocery and while I was there, saw a virtual mountain of Idaho Russet potatos on sale. They were $2 for 20# of potatos ! I can't grown them for that. Is there a glut on the market for Idaho potatos? Bumper crop this year? These are not those little potatos, but those gourmet type large baking potatos. I got me a couple of bags of them. Now, what do I do with so many potatos?

I am going to make some into "twice baked" potatos, and some will get mashed with sour cream and roasted garlic. And some will get rubbed with olive oil and then baked, the innards scooped out and fried, and the skins "dressed" for snacks.

What else can I do with these potatos that I can freeze?

Does anyone wish to share a favorite recipe or two?

I am sittintg here with 60# of these beauties.
