Do Sweet potato slips still grow leaves in water when off the potato?

Oddly I can't find a definitive answer on this. I recently purchased some Murasaki Sweet potato slips from Gurney's, which arrived in horrible condition. The roots are still intact however, so I have them in water. Do slips produce more foliage by themselves, or are they required to still be on the potato to grow foliage? I know that they will grow more roots in water, but I need to figure out if they will grow foliage and become an overall healthier plant so I can plant these in the raised bed I prepared for them.
