What's for dinner Thursday night?

Asian veggie patty, kale with citrus dressing and just a tiny amount of pasta left over from last night (re: What's for dinner, Wednesday night?)

A little side story on the kale. Two weeks ago I was visiting my sister in Asheville. We were at a supermarket deli section and I noticed the kale in citrus dressing. I googled and I think I came pretty close to the one I had there.

I have two choicesÃ¢ÂÂ¦.left over Chinese from Tuesday night or left over chicken parmesan from last night. They were both good so I'll have to think about it.

Ravencajun, I have some beef ribs in the freezer--think I'll copycat your recipe. Not so crazy about beef ribs but they were on sale at some point. Gadgets, you put me to shame because you always seem to eat so healthy. Need to take some lessons from you!! Pam, nothing tastes better than a well-done (as in blackened) hot dog from the grill. Love cucumber salad too. I make mine in a creamy sauce with dill, but like the vinegar onion cucumber salad, too. How do you make yours? Georgysmom, I'll sure be glad when you're home--miss you so much here!! I read in your other post about being tired of eating out and understand that feeling. Although I could use about a week of it right now. This hot weather makes me lose my appetite. Not that THAT would be a bad thing since I have 15 pounds to lose. Kathleen, we had rain sometime in the night and it was cool and breezy this morning. It felt wonderful, but warmed up fast. Hope you're feeling better. I had to turn the air on because it was making me feel a little queasy and knew I wouldn't sleep with it so hot. When I turned it on, it was 83 inside. Groan!

DH and I went to a financial planning meeting we were invited to by our banker. It was in a local restaurant. Appetizers: platter of chicken satay, boiled shrimp and tuna tartar with tomatoes on flatbread. Salad: I had the house salad, mixed greens, goat cheese, cranberries and a cooked pear.( DH had the caesar.) Entree: Filet Mignon Dessert was an assortment but i just took the vanilla ice cream. wow, chicken livers... haven't had them in a LONG time. Sauteed chicken livers used to be a comfort food for me! Most people I know now would rather starve than be forced to eat a chicken liver. I can't imagine a restaurant selling them. lol! Great. Now I'm craving either chicken liver, beef liver, or liverwurst. ;p Good thing I have a chocolate cake in the oven! :)

Same as yesterday -- Various snacks, cheeses, hors d'oeuvres, mini sandwiches, chocolate-dipped fruits, and brownies at a Christmas party. Yesterday was a retirement party for the head of the University Library where I work, today was a shindig put on by a large realty firm at which friends of ours work.

I will be grilling chicken thighs with how wing sauce (I love hot wing sauce--the hotter the better) roasted potatoes, and onion and green beans that I canned last summer.

Bananas Foster for dessert.

You need to share the citrus dressing recipe ; it sounds good.

Fixed a good salad with mixed greens and all kinds of stuff, lol. Robert didn't want ginger dressing again, so I whipped up creamy green goddess type of concoction.....then put our leftover salmon from last night on top.

I am going to have to get some asparagus!
