Recipe: Broccoli Cheese Soup

Ingredients

* 1 whole Onion, Diced
* 1 stick 1/2 Cup Butter
* 1/3 cup Flour
* 4 cups Whole Milk
* 2 cups Half-and-half
* 4 heads Broccoli Cut Into Florets
* 1 pinch Nutmeg
* 3 cups Grated Cheese (mild Cheddar, Sharp Cheddar, Jack, Etc.)
* Small Dash Of Salt (more If Needed)
* Freshly Ground Black Pepper
* Splash Of Chicken Broth If Needed For Thinning

Preparation Instructions

Melt butter in a pot over medium heat, then add the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in milk and half-and-half. Add nutmeg, then add broccoli, a small dash of salt, and plenty of black pepper.

Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt.

Taste seasonings and adjust if needed. Then either serve as is, or mash it with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree it in a blender, return it to the heat and allow to heat up. Splash in chicken broth if needed for thinning.)

You mean bookmark them? You can go to her Tasty Kitchen portion of the website. She has a section with her recipes and you can hit "Add to recipe box" and save them to your own recipe box.

If you want to print just the recipe, without all the illustrations, go to the bottom of the page, to the recipe and there is an option to print it, in several sizes. I print all of the recipes I want to save in pdf format and save it to my recipe file. Once you click on "print recipe" it will take you to another page where you can make a few more choices then select "print". It will bring up the print box where you can select your printer.

You can download a FREE software program that will install as a printer and print to a pdf file, and you can save it that way. I use PDF995, others like Cutepdf. Once you save the pdf file you can open it in Acrobat Reader.

I save in various ways. For maximum efficiency, I copy & paste. Sometimes I'll print it to a .PDF file using Premio's free version. Otherwise I'll save the file through the browser as a web archive and that'll have the pictures too. Occasionally I'll just save it through the browser a an .HTML file. .PDFs and HTML archives take a lot more space if you save a bunch of stuff so if you're short on hard drive space that could be a consideration. I do like saving that way if there's picture instructions that are useful.

A simple way to save would be just to save a link in your bookmarks, you could create a folder titled "Pioneer Women Recipes" and then save ones that look good inside that folder. Just a thought anyway.
