Simple Pork Dish

I had the leftover end of Sunday's bone-in pork loin and needed to do something quick and easy for an early dinner. I started a batch of basmati rice and some frozen broccoli. I sliced the cold pork really really thin, and then cross cut it into roughly one inch squares. I sliced a Vidalia onion and sautéed it in olive oil. When it just started to brown, I added some ground cumin, ground ancho chile, Mexican oregano, a good squeeze of tomato paste and salt and pepper. Once that was well stirred in, I added the pork and half a cup or so of water and cranked up the heat. I stirred it more or less constantly until the pork started to break up and the water evaporated. By then the rice and broccoli were ready. I plated up and had dinner on the table about 20 minutes after I started.
