Comments (19)Wow! Lots of good ideas. We have frozen broccoli in the fridge. I'll give the combination a try when I make mac & cheese this week. I usually barely thaw the broccoli with a little water in a covered sauté pan and then drain the water, turn up the heat, and finish it with a bit of olive oil and a sprinkle of salt. msazadi - I've followed DW's example in cutting way back on, rather than completely eliminating, problematic foods. Catsup is a good example. Instead of slathering my cheese steak with catsup, as I did in the good old days, I used just enough to taste that it was there when I made them for lunch today. Comments (33)I love Brussels sprouts, and just made some, sliced and sautéed with leeks in butter. Very yummy. I also like them just plain boiled with butter but I just can't manage to like them roasted, they never get done enough for me. I'm one of those odd people who don't want "crisp tender" vegetables. I want them raw or I want them cooked and nothing in the middle, LOL. Melissaki5, I have the same family members, I think, they won't eat a vegetable unless it's covered with cheese, butter or some kind of cream sauce. I won't touch that green bean casserole thing, but 75% of my family loves the stuff, go figure. I also love beets, any way you can cook them. Marinated, grated raw into salad, just boiled with salt, pepper and butter, Harvard Beets, you name it, I'll eat it if it has beets! Happy Thanksgiving, I'd make the Brussels sprouts! SQUASH & SWEET PEA STUFFING ***************************** 4 small acorn squash-cut in half & remove seeds) 1/4-1/3 cup water 1TBS olive oil 1/2 cup diced celery 1/2 cup diced sweet onion 1/3 cup orange juice 1 (16 oz) pkg Baby Sweet peas..(frozen) 1 TBS cornstarch 1/2 cup chicken broth 2Tsp honey 1/2 tsp salt 1/8 tsp pepper 1/3 cup craisins *********************** In 9x13 pan..place squash upside dowm. Add water & bake in a 350 degree oven for 25-35 min-or till tender. Set aside. In med. saucepan..heat olive oil. Add celery & onions-cook 5 min or till tender. Add OJ & peas, cook 5 min., stir frequently. Whisk cornstarch & chicken broth till smooth...then add to the pea mixture. Remove from heat & add the honey, S&P, and craisins. Comments (6)My favorite asparagus recipe: Mustard-Dressed Asparagus Cooking Light, April 1998 4 lbs asparagus (I used 1 bunch) 2 Tablespoons Dijon mustard 2 Tablespoons lemon juice 1/4 teaspoon salt 1 Tablespoon mustard seeds Snap off tough ends of asparagus. Bring 4 qts water to a boil in an 8 qt stockpot. Add half of asparagus; cook 3 minutes. Remove asparagus from stockpot. Rinse with cold water; drain and pat dry. Repeat procedure with remaining asparagus. Combine the Dijon mustard, lemon juice, and salt in a small bowl. Place a large nonstick skillet over medium heat until hot. Add mustard seeds; cook 1 minute, stirring constantly. Add asparagus and mustard mixture, and cook 2 minutes of until thoroughly heated. Yield: 8 servings...See Morepkramer60
