Question about 5 min Artisan Bread and steam

I'm trying the 5 minute Artisan Bread recipe that I got online. It's the one where the bucket of dough rises in the fridge... not the dutch oven one.

I'm about to shape a loaf and have a question about the broiler pan. First of all I'm assuming that they want you to have the tray/lid on the broiler pan... right?

But is there something special about having the pan with it's "lid" that helps with steam or will any sort of open shallow pan work just as well as the 2 piece broiler tray?
