5 Min. Artisan book- Buy now, or wait?

I've been tempted to buy the book based on so many people's success w/ the recipe & adaptations. I ordered a baking stone & peel from KA, which should arrive soon.

Most every post on this method has mentioned that there are a number of errors in the book, and to check the website for corrections. I'm guessing that with its huge success, this book is likely to be updated and printed with corrections, and perhaps more info. that the writers have gleaned from all the responses people who have tried the method have written in to them.

I have no experience or knowledge of how the publishing industry works - whether a new version will be out soon, or if we're talking months/years.

To those of you that have the book, do you think it's enough to have the basic recipe printed here? Or do you think I'm missing out on a lot of great info/recipes if I wait to purchase the book?

Amck, I ordered my book from abebooks.com and they have it, new for $17.27 + 4.00 shipping. Amazon.com has it for a similar price. Personally, I think you'll get a lot of use out it while you're waiting for a new and revised edition. Just my 2c worth.

The authors are now at work on a new book that focuses on whole grain and multi-grain breads. I got their first book from my public library and copied out the recipes that I thought I might want to try. I may still end up buying the first book, corrections and all. But I'm looking forward to their next book, too!

I didn't extrapolate - I just had already added onions to the ice water bath, and you can always omit spices (didn't have tumeric and didn't want hot peppers) so decided to follow that one rather than making it with full cup of sugar I usually put in fridge pickles, and processing for 5 min as in the Cross-cut recipe. Bread and Butters My Way, page 89 (though I think I would like to double her sugar). I thought you could always change salt (except in brined pickles) and sugar amounts, as well as dried herbs, to taste. I dumped the pickles - decided to open the jars in the fridge, but saw they were mushy. The unprocessed ones in the Classico jar aren't, but don't taste like much except tangy (vinegar and/or onion) yet, so I added a bit more water to those - may add more sugar too. But those should be OK since they're not sealed tight (PB lid doesn't fit well). Just for future reference, if I suspect something doesn't have enough acid, I know I can reprocess within 24 hours, but for something you don't want to reprocess (like pickles), you would *open* the jar and stick it in the fridge, right? What is the safe time limit for that (again, assuming that it's something like pickles and you're not going to cook them)? NCHFP course just has a test question about 5 days tomatoes with no acid (dump them jars and all), doesn't say what to do if you discover it sooner (other than reprocess w/i 24 hrs). I got mine on QVC the shopping channel. They were selling HP's and it was one of their special items. Just happened to flip the channels and got hooked. I did see the same one at Best Buy one weekend for the same price. I would check their ads. Mine is 1Gig with 160 HD. These little machines are so tough you can bang them around (I do). They stay cool and are silent. I have no idea how they are built, but they work so well. I saw an Acer with 2G and 150 HD but it comes with Vista basic. The screen was 11" and costs $499.00. I think that's overkill because you woudnt't use these little machines for much more than internet. The screens are small and if you spent hours reading on it your eyes would hurt. But they are 10 times better than reading on a Palm or Blackberry, plus they don't weigh much more. Best thing since sliced bread... Jane

Shaun, are you working on the master recipe? If so, you won't notice much of a rise during the resting period. Most of the rising will happen during baking. According to the authors' instructions, you should preheat the oven to 450Â°F twenty minutes before baking. But as you know, I don't follow directions well, so I'd recommend preheating the oven at least 30 minutes prior. Their recipe also suggests you liberally flour the top of your loaf before slashing it, so the blade won't stick to the dough. Well, I don't like a lot of flour baked into my bread, so I always skip that step and the blade slices through the dough without sticking. Just be fearless with the blade and do quick, clean cuts. Stick it in the preheated oven with a baking stone placed on the middle rack and place an empty broiler tray (for holding 1 cup hot water) on another shelf -any shelf- as long as it doesn't interfere with the rising of the bread. jkom51-- To tell you the truth, If I were interested, I could very easily put together a crew of about 10 people (5 teams) and keep them busy full time with all the work I've been offered all over the country, just from this forum. Some of it has been truly tempting, too, starting with igloochik's home in Alaska, as well as the one she's starting work on in the PNW. Even pcjs's post is tempting! There are several problems, there, though. First, alot of my credibility in the forums comes from the fact that I'm not asking for anything in return for the information I give out here. There are no ulterior motives. I'm here because I want to help people. Secondly, I would most likely run into problems from iVillage, being that then I'd be here for profit. Lastly, and this one would be important to all of you, and that's the fact that in addition to the normal costs of doing the work, there would also be travel expenses, as well as lodging and per diem costs, making it really kind of impractical for me to go around doing the work. Unfortunately. I say unfortunately because right now, the housing market has made work just as scarce here as it is in many other parts of the country, and I'm doing commercial work now, just to stay busy. It IS custom work to be sure (period specific work for the Maine Historical Society in Portland), but none the less commercial work, and I'm not very happy about it. But you do what you have to do. :-)

I jsut got it from Amazon and I cant wait to start making the goodies in it. I also got the Steve Raichlin double pronged bamboo skewers to bump the order to $25 to get the free shipping.

Well worth it IMO!

I printed the two pages of corrections and easily made the edits to my copy. However, I wish I had waited for the revised copy because I have already eaten 1 and 3/4 of the 2 loaves I have made--with lots of butter! I am tempted to throw away the rest of the dough in the refrigerator in order to save myself.

I wrote to Zoe (author) about 2 or so months ago asking if the publisher was going to reprint the book since there were so many errors. She said, "No." - No updates were planned, just a diff. book. So, I bought the orig. edition and just made all the changes directly on each page as required.
