Easy ...ice cold watermelon. I can eat a whole quarter of a large melon in a single sitting.

Cheryl Ok, When I make twice baked potatos it is not a recipe but rather just a combination of a technique and your imagination. I start with large potatoes. I prefer large Idaho bakers that are running about a pound each. If I am cooking something in the oven I put then in the oven to bake, otherwise I nuke them till they are done. I then slice each potato in half longwise, and use a tablespoon to scoop out most of the flesh, leaving the skins about 1/4" thick. Making the filling is basically just like making mashed potatoes only instead of using a hand masher I use an electric mixer and work up to high speed toward the end of the process to fluff it up good. The ingredients in the filling ultimately depend upon what entree I am serving the potatoes with. If I am planning to serve them with beef or pork I generally add milk and butter or margarine just like making mashed potatoes, but if I am serving them with baked chicken I use some of the chicken broth from the chicken. Sometimes I bake fish in milk, butter, onions and corn and I use some of the milk broth from the fish pan. Next I add shredded cheese. Usually its shredded yellow or white cheddar, but if I am making a spicy meal I use shredded Monteray Jack cheese. Most people like bacon bits in them, but I am not big on bacon however I do like to add chopped chives, finely chopped onions, minced garlic and sometimes I even add mexican salsa. (Not all those things at once mind you. I just like to make them a little different each time, It all depends on what I have at hand.) And if your feeling real decadent add some sour cream, but then if that is not on your diet, I have had success with using some yogurt. Now mix all that on high speed to work a lot of air in and fluff it up real good, then spoon that mixture into the potato skins and heap it up real high. If the oven is still hot you can put those on a cookie sheet and set them under the broiler for a few minutes to get a light brown on the tops, but if you nuked the potatoes and your not using the oven, here is a tip I learned from a chef in a big convention center. Use a Propane torch to put a light brown on them, nobody but you will ever know. (The torch also works perfect to put those nice little brown peaks on your maraingue pies). When I use the nuke and the torch I can make them start to finish in about 20minutes. Now generally when I make them I make about 6 or 8 even though its just Jan & I. We each have one with the meal the the rest are wrapped and popped in the freezer where they can be quickly pulled out and nuked later.

My favorite is Peanut Butter fudge,only problem is i can't make it!! Mine never turns out the way it should.I don't mean the one on the marshmallow fluff jar either.So my sisters and niece send me some at xmas time. Also like pb&j sandwiches with either apricot/pineapple jam or blueberry jam,like grape jam,but not grape jelly. On a spoon,straight from the jar. On crackers,especially graham with some marshmallow fluff.But even though i love that last one,i don't eat it anymore,too addicting and too fattening. I also have a recipe for PB frosting on a chocolate cake,YUMMO. Just give me PB and i'll eat it someway. Kathi

Interesting thread... So hard to answer though. I enjoy so many foods it's hard to pick just one but I'll say to eat something like lasagna or chicken parmigiana- can't pass up anything with melted mozzarella and red sauce. To make is anything new that teaches me a new skill. Like the first time I made gnocchi or pasta from scratch. I love making new things and after I've done it a few times I generally don't enjoy making it again, unless I really want to eat it then I dont mind. To repeat is usually simple, sautéed green beans, and salmon. I used to make it a lot but now I won't eat farm raised salmon and the wild caught can be cost prohibitive. I've even found frozen Alaskan wild caught that was made in China, I won't buy that either. I'm assuming they catch it it Alaska and package in China.

Mmmm, so hard to pick just one. I think fresh peaches edge out strawberries and blueberries, but on hot summer days like we had this past week I want watermelon. I always have to keep apples on hand also - I make an apple pie about every month in summer. I love limes and lemons to squeeze over fruit, salads or fish/chicken. but not to eat out of hand. (%#@*! raccoon got through my netting and ate ALL of the peaches in one night!! later cleaned out all the plums too, and even the little green pears, and now most all of the apples - in spite of netting). After this summer battling the voracious critters - and usually losing- I am contemplating giving up and giving away most of my fruit trees. I have 7 blueberry bushes of various varieties, in pots (the only way to easily grow them here) and they were so productive this year (I built a cage around them, so the critters didn't get them)! I have one peach in a large pot, a "french plum" that produced nothing this year, a native plum that fruits heavily but I rarely get to harvest more than a couple (it is too big to net), another mystery plum, 2 asian and one Bartlett pear, a canadice grape, 3 productive bush tart cherries (also under a netting cage - and several sprouts from fallen fruit), and several apple trees - a couple in ground (super dwarf) and the rest in pots. I grew pumpkin and acorn squash last year - both volunteers from the compost pile - but this year, the volunteer vines are blooming like mad but not setting fruit. OH, and two hardy kiwi - a male and a female (supposedly) - but it has been years and there is no sign of ever blossoming while they try to take over my mini orchard. They really do have to go - they want too much space. I gave away my Manchurian Apricot, because it blooms so early that our April freezes got it every year. I also grow lemons, limes, and figs in pots. The figs are ripenig now - so good! They overwinter in the garage; the citrus come indoors to a south facing extra bedroom.

Fresh, tree ripened apricots picked from a tree grown locally.
Or a papaya I have gotten at the Farmer's Market on Maui....or a freshly picked mango in Maui.
Or freshly picked white peaches.

I love, love, love fruit. I'd probably place blueberries at the top of the list. The only fruit I can say that I don't/won't eat are peaches. Although the "meat" is good, I can't stand the fuzz. I don't even like to touch a peach. I love nectarines, though.

I love most fruit srawberries fresh oh my raspberries,,,watermelon.I dont like avacados,mangos but all the rest mmmmmmmlove itWhen I was a kid parents had 3 cherry trees .I use to climb up the tree eat and eat till we got skitters..

I eat very little fruit because most all fruit seems to make my jaws clinch, like it is too tangy.

When I can get fresh, tree ripened fruit, then I can eat it. Fruit from the grocery stores is still too hard and not ripe.

The only fruits I truly like are the ones most people classify as veggies - tomatoes and peppers, both hot and sweet, top my list.

None of the sweet fruits appeal to me, LOL. I won't eat apples, oranges, bananas, peaches, plums. I will occasionally eat a bit of melon, but never watermelon. I will ocassionally eat berries, but once a year is more than enough.
