Lettuce, one of the easiest edibles to grow, is considered a cool-season crop, but it can be grown throughout the year, depending on the climate. From salads to sandwiches, there’s not much we eat that lettuce can’t contribute to. With some lettuces ready to harvest after only a month, you can get them in your recipes quickly.

Eggplant is one of those summer edibles that are almost too beautiful to eat. But once you get a taste of it fresh off the grill or out of the oven, you might just change your tune.
