DIY Wood Counter - Talk some sense into me

I've been eyeing Lumber Liquidators' butcher block slabs. The price seems good to me; and, in my head, that's the counter I see along my sink. It's $350 - with tax but not with shipping (that adds another $100, unless I rent a truck and pick it up myself) - for a 1 1/2" x 25" x 144" unfinished slab.

The problem is finding someone to finish it for me. Our GC's carpenter doesn't seem that interested. One of the local Amish woodworking shops wasn't interested. Should I just randomly call carpenters from the phone book? Should I ask my GC to use his equipment to cut out the sink and two angles on the end, then sand and Waterlox it myself? That's not something I could do well, as a woodworking noob, is it?

The budget isn't high, so I can't go with John Boos or Grotsky or Devos or any company that actually does this and only this. The alternative is Basalt Slate, which is fine, just not quite my vision.

We're splurging on the island and bar countertops. Those will be Cambria Bradford. I love it; and, with the island/bar abutting the LR and right there when you walk in the front door, I think it should be nicer.

The cabs are maple, Shaker with slab drawers, ginger stain. The light specks in the Cambria really go well with the cabs, and the blue/gray picks up our "foyer" flagstone.

I'm not sure what I'm looking for. Advice on buying and finding a way to finish the unfinished slab? Reassurance on the Cambria Bradford and Basalt Slate together? A good smack on the noggin?
