Help for the canning challenged please?

I"ve never ever canned or seen anyone can before. I've really been getting into baking and typically give baked goods as gifts for the Holidays. I'd like to expand to making apple butter and some jams/jellies. Starting off simple I guess. I figure our elderly relatives dont' need anymore nightgowns or slippers and always enjoy homemade food. So... do I just buy some mason jars? What size? Where is a good source to buy them? Can I do this with just a couple large stock pots and a pair of tongs to start? Please tell me what I need to get started for some simple ideas.

Also... while looking at recipes for apple butter I noticed that (obviously) the butter and jams require alot of sugar. I just remembered that most of the older folk in the family are diabetic. Does anyone have any good ideas of what I can make that'll not be so high in sugar? I know it's the sugar that makes the apple butter so delicious!
