Spiced Cake Mix

Hi Everyone, I just came across a DH Spiced Cake Mix in my pantry. My first question is do they go bad? I have no earthly idea where or when it came from. I don't remember ever buying a cake mix!

And my second question is I'd like to use Pat T.'s recipe and add carrots and nuts to it to make carrot cake cupcakes. Do I need to add or decrease anything?

1 cake mix (18.5 oz.)

1 cup whole milk (can use 2% but NOT skim)

1 stick butter, melted

2 tsp. vanilla

3 eggs

(if I'm making a chocolate cake, I add 4 Tblsp. cocoa)

Preheat oven to 350Â° F. Grease and flour two 8-inch round cake pans. In large mixing bowl, combine ingredients listed above. Beat just until blended, and no lumps remain. Pour into pans and bake at 350Â° F. for 27-29 minutes or until cake tests done.

Old cake mix gets really nasty as the fats in it go rancid.
If you have a doubt, taste some of the dry mix...it will be bitter and nasty.
And it really pi$$es you off if you make a cake and frost it before you discover the old mix.
Ask me how i know....not that I have ever used a cake mix...;)

Gina - definitely taste it to see if it is rancid. If it's not - instead of making carrot cupcakes out of it - make Paula Deen's Gooey Carrot Cake and use the spice cake mix for the base instead of a carrot cake mix:

GOOEY CARROT CAKE

1 pkg. carrot cake mix
4 eggs, divided
1 stick (1/2 cup) butter, softened
8 oz. cream cheese, softened
1 lb. box 10X confectionersÂ sugar
1 cup finely grated carrots
1 cup pecans, chopped
1 tsp. vanilla extract
Mix cake mix, 2 eggs, and butter. Pour into a greased 13- x 9- x 2-inch baking pan. Mix cream cheese, confectionersÂ sugar, 2 eggs, grated carrots, nuts, and vanilla with mixer and spread over batter in pan. Bake at 350Â° F. degrees for 45-50 minutes. Dust with confectionersÂ sugar.

Spanish Bar Dry Ingredients: 2Â½ cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder Â½ teaspoon salt 2 teaspoons cinnamon Â¼ teaspoon ginger Â½ teaspoon grated nutmeg (don't miss a chance to use freshly grated nutmeg. (They used to call it Spanish Bar Cake in the old A&P days.) (PS....leave the raisins out if you don't like them.) Use any frosting you like; cream cheese style works well. Blend an 8 ounce package of cream cheese, softened with: 4 tablespoons butter 2 teaspoons vanilla 2Â¼ cup confectioners' sugar 1/3 cup milk 1 teaspoon fresh lemon juice Beat well, add milk if necessary to be smooth and pretty. Frost cake. Make squiggles with a fork to design top.

Sounds like my aunt's recipe. Spice cake mix, a can of pumpkin mixed into the dry mix, bake as directed. Kat added a bit of pumpkin pie spice, probably a tsp or less, and some crushed pineapple, probably drained. My aunt has even made the recipe and made cookies instead of a cake with it. Tami

There's a simple one that's just a cake mix, a pie filling and two eggs. A 13 x 9 pan goes for 25-30 min. @ 350F. I do that one with chocolate cake mix and cherry pie filling. I make hummingbird cake often. Usually cupcakes since I can freeze them. So yes, it does freeze well. I've made it from scratch and also the box cake mix version, and lived to tell the tale. Both great, got raves. Sometimes I want to make a cakelike impression but my brain is fried and my time is super short, so using a cake mix is worth it. Be aware that they are fiddling nowdays with cake mixes to make them smaller so you will have to google how to adapt older recipes using the larger box cake mixes. Lots of info about this online. Another "hummingbirdish" (I just made that word up) cake, meaning one with an equally obtuse name, is "Pig Pickin' Cake" which is sort of an orange chiffon cake, which I made from a box mix and everyone raved at the office and I worked at a place where a gourmet cake baker brought in cakes for birthdays all the time, so I was able to hold my own with some stiff competition. I used Pioneer Woman's Pig Pickin' cake recipe using a yellow cake mix, but there are gazillions of versions out there on the 'net. Use whatever method floats your boat, this cake is not subtle, it's very forgiving.

Or if it's still good, mix the dry mix with one small can of pumpkin puree and bake as directed. No other ingredients. YUmm! From weight watchers, and my aunt also makes it into cookies instead of the cake.

Tami, your WW recipe sure sounds good. We are on a pumpkin kick at our house. Made pumpkin scones today, muffins two weeks ago. These pumpkin baked items freeze so well. Also have had a few pumpkin donuts from Dunkin Donuts last week.
