Spiced Cake Mix

Hi Everyone, I just came across a DH Spiced Cake Mix in my pantry. My first question is do they go bad? I have no earthly idea where or when it came from. I don't remember ever buying a cake mix!

And my second question is I'd like to use Pat T.'s recipe and add carrots and nuts to it to make carrot cake cupcakes. Do I need to add or decrease anything?

1 cake mix (18.5 oz.)

1 cup whole milk (can use 2% but NOT skim)

1 stick butter, melted

2 tsp. vanilla

3 eggs

(if I'm making a chocolate cake, I add 4 Tblsp. cocoa)

Preheat oven to 350Â° F. Grease and flour two 8-inch round cake pans. In large mixing bowl, combine ingredients listed above. Beat just until blended, and no lumps remain. Pour into pans and bake at 350Â° F. for 27-29 minutes or until cake tests done.

Old cake mix gets really nasty as the fats in it go rancid.
If you have a doubt, taste some of the dry mix...it will be bitter and nasty.
And it really pi$$es you off if you make a cake and frost it before you discover the old mix.
Ask me how i know....not that I have ever used a cake mix...;)

Gina - definitely taste it to see if it is rancid. If it's not - instead of making carrot cupcakes out of it - make Paula Deen's Gooey Carrot Cake and use the spice cake mix for the base instead of a carrot cake mix:

GOOEY CARROT CAKE

1 pkg. carrot cake mix
4 eggs, divided
1 stick (1/2 cup) butter, softened
8 oz. cream cheese, softened
1 lb. box 10X confectionersÂ sugar
1 cup finely grated carrots
1 cup pecans, chopped
1 tsp. vanilla extract
Mix cake mix, 2 eggs, and butter. Pour into a greased 13- x 9- x 2-inch baking pan. Mix cream cheese, confectionersÂ sugar, 2 eggs, grated carrots, nuts, and vanilla with mixer and spread over batter in pan. Bake at 350Â° F. degrees for 45-50 minutes. Dust with confectionersÂ sugar.

Here is one for a to die for peanut butter candy treat. Peanut Butter Meltaways 24 oz bag of white chocolate morsels 18 oz jar peanut butter 12 oz bag milk or dark chocolate morsels Butter well a 9 x 13 metal pan In microwave, melt the white chips stirring every 40 seconds. A total microwaving time of about 3 minutes should have the chips completely melted and smooth. Stir peanut butter into white chips well. Pour into buttered pan. Melt chocolate chips. When smooth, pour over the peanut butter mixture and marble in fairly well. Refrigerate till firm enough to handle. About an hour should do it. Cut and remove from pan. Store in refrigerator. I find that these are easier to remove from the pan if you don't let it chill too long.

Sounds like my aunt's recipe. Spice cake mix, a can of pumpkin mixed into the dry mix, bake as directed. Kat added a bit of pumpkin pie spice, probably a tsp or less, and some crushed pineapple, probably drained. My aunt has even made the recipe and made cookies instead of a cake with it. Tami

This is a recipe I've used for years....tastes like chocolate covered cherries.. 1 box Duncan Hines Devils Food cake mix 1 (21-ounce) can cherry pie filling 1 teaspoon almond extract 2 eggs, beaten 1 container Duncan Hines Chocolate frosting Pecans, chopped (optional) Heat oven to 350. Grease and flour a 13x9-inch baking pan. In a large bowl, combine all ingredients except frosting and stir until well-blended. Spread in greased and floured pan. Bake at 350 for 25 to 30 minutes, or until toothpick inserted in the middle comes out clean. Frost bars while they are still warm. Cool at least 1 hour. Cut into bars. Mary, for not feeling well, you sure can cook a good meal! :-) Soon the surgery will be over and hopefully you will feel so much better. I'm fine--just restless like I should be doing something (like cleaning the house). Raven, I'm so glad your mother enjoyed her party so much. It sounds like a wonderful family affair and I bet you had great food, too. What is hot boudin? Your description at the meat market made me want to grab a cooler and head west!! Shirley, it's nice you can cook a few times and get so many meals from your efforts. I ask Harry for suggestions for this coming week's menu and he always says the same thing--"I don't know". Well, he'll know next week because we're eating out of the freezer all week. Needs it anyway, but I sure wish he'd give me a clue once in a while. Thanks, Sue. Or if it's still good, mix the dry mix with one small can of pumpkin puree and bake as directed. No other ingredients. YUmm! From weight watchers, and my aunt also makes it into cookies instead of the cake.

Tami, your WW recipe sure sounds good. We are on a pumpkin kick at our house. Made pumpkin scones today, muffins two weeks ago. These pumpkin baked items freeze so well. Also have had a few pumpkin donuts from Dunkin Donuts last week.
