Never tried it but sounds good, I bet it would be good with a dab of cream cheese in the middle, pour half full drop a dollop in pour remainder, would add moisture too.

I had these sausage pinwheels in Oklahoma that were so good, they would be excellent for this kind of event. Here's the recipe she used from taste of home.

Anyone actually tried the duncan hines pumpkin muffin mix?

There are many chemicals and two transfats in that cake mix, as is typical of overprocessed "food". You might want to look for something more healthy.

Just was hoping to see if a KT'er had actually tried the recipe.

Haven't done that one, but the cake recipe where you use a box of angelfood and a can of pumpkin is excellant, so that one's probably not bad.

Only thing, though--people don't take one mini muffin--they tend to pick up 2 or 3 in my experience, so I'd at least double the recipe so no one is left out in the cold.

I just said one muffin per person, in relation to the post regarding the unhealthy aspects of the cake mix.

I'm going to make these just as a test, and if they are good, then I'll make another batch.

Yes, I have made these muffins several times. They can be a little soggy - I read once to use an egg white and a handful of oatmeal and I do think that helps. Mini muffins should be a lot less soggy anyway, so I think you should be fine.

Don't make them Glenda. I made the Pumpkin Better then sex cake, it was ok, but kinda thick & tough. I won't make it again. You need eggs and all the rest for a nice fluffy cake.
Go to pinterest and look for pumpkin muffins or cupcakes with all the ingredients.
quick & easy isn't always the best.

Glenda, I tried this recipe with the pumpkin and a chocolate cake mix. It turned out okay, like someone said a little too moist. Maybe try 1/2 the amount of pumpkin? Seems like I also had to cook longer then 15 mins, but test and see.

Yes, I was at a function last night and someone had made this recipe. I didn't think it was very good, but several other people commented about how good it was. But I noticed a lot of it did not get eaten.

I halve the Downeast Maine Pumpkin Bread recipe from the Allrecipes site and make muffins and mini muffins out of them all the time. Sometimes I sprinkle pecan pieces on the top before I cook them. I like the Allrecipes recipe much, much better than the can of pumpkin/cake mix recipe.

I do think several people last night genuinely enjoyed the pumpkin/cake mix cake, and I think if you make it for your group they will enjoy it. My friend who made it said it's extremely easy and convenient. And even if it's not the absolute tastiest recipe, it's tasty enough.

Good luck whatever you decide, and I hope this helps. FWIW, I'd put chocolate chips in it if I made it.

I have a Mr Food recipe that I will try instead.

I made them, they seemed really "doughy" to me. Too moist.
I see there is a cookie recipe made the same way, pumpkin and spice cake mix, frost with browned butter frosting. I'm scared to try them. lol

I made that recipe with pumpkin and chocolate cake mix. I found that they tasted better and less like pumpkin the day or two after making them. DH doesn't care for pumpkin and he liked them. I found them moist but then again, I like really moist cake! hahahahaha

I was at at event where that cake was served.
I did not like it.
There was much of it left, while other things got cleaned out.

What you are taking about making is like the Weight Watcher 2 point muffins except that they add 1 cup of water to the cake mix/pumpkin recipe. I have had them before and thought they were very good. Here is the recipe I found for them.

Ingredients:
Serves: 24
Yield: 24muffins

1 (18 ounce) box spice cake mix
15 ounces pumpkin
1 cup water

Directions:
1 Mix all ingredients in mixer.
2 Makes 24 muffins.
3 Cook for 20-25 minutes at 350ðF.
4 They will be very moist.

I've made them and they're delicious. I just bake them about 5 or 6 extra minutes and they're fine.

So many nay-sayers here! LOL

BTW, I see your recipe is for "mini muffins" - those cook up perfectly as per package directions. I used regular-sized cupcake/muffin cups and baked them the extra time.

wonder if you added an extra 1/2 t of pumpkin pie spice it might jazz it up?

A friend shared your recipe with me last year; she loved it.

I made it just the way you posted it but I wasn't overly impressed. I remember it being "okay," but bland. But then, I like my sweets oooey and gooey and s-w-e-e-t.

Being diabetic, her/your recipe was a better choice (but making wise decisions hasn't always been my strong point! LOL)
