I have a recipe that came from my great grandmother for Applesauce Cake. Mom always made it as cupcakes. DD made them for soccer fundraiser last Sunday and substituted pumpkin. They were so good! So tonight I made a single batch of the applesauce and a double of the pumpkin substitute. I didn't realize I only had a couple of muffin papers left, so didn't buy any when I got flour this afternoon. So I put the applesauce one in a 8 x 8 pan, and the pumpkin in a 9 x 13.

Applesauce Cake

1 1/2 c applesauce 1 egg

1 c. sugar 1/2 c. shortening

2 c. flour 1 t. baking powder

1 1/2 t. soda 1 t. cloves

1 t. cinnamon

1/2 t. salt

Can stir by hand.

350 20 - 30 minutes in muffin tin.

* Can substitute pumpkin puree for the applesauce in equal amounts. If making in a 8 x 8 pan, bake about 45 minutes, a double batch in a 9 x 13 pan, bake about 40 minutes.

Oh, and dinner was left over chili that I had frozen!
