I'm ready to start putting together some mixes but had some questions. I'm lactose intolerant -- sort of. I cannot deal with fluid milk. Can't drink it straight or in shakes or take in gobs of milk-based soups. I can handle cheese just fine. The same with ice cream & yogurt (however I don't eat these frequently). Milk or buttermilk in baked goods is no problem either.

I never keep liquid milk in the fridge. However, I usually have heavy whipped cream on hand. If I want a creamy gravy, I use broth and add a couple of tablespoons of cream. For baking, I make up some instant dried milk and add cream to approximate regular whole milk.

I'd like to make some "Magic Mix" but am concerned about using dried milk. I'm worried that the amount might affect me. Do you think Morning Moo would work as a substitute in mixes? Do you know of another dried non-milk product that would work? Thanks for your help!
