Grainlady - Couple of questions. . .

Any idea why whole powdered eggs seem to be on backorder everywhere?

My kefir is going like mad. I'm just using milk from the store. Can you use powdered milk for it? I'm sure using a lot of milk!

Is it my imagination or is my bread rising better with the kefir? I think that's all for now. Thanks for sharing all the information you have absorbed!!

Yes...(about powdered eggs). This is information I received via e-mail from Honeyville Grain just the other day.

"As many of you know we have been out of stock on our #10 cans of Powdered Whole Eggs and Egg Whites for about 3 months. This has been as a result of working with the USDA on plant and label approval with new stricter requirements with respect to eggs. We've endured numerous delays and setbacks throughout the process. About a week ago we had received approval to begin Production. We did so and even had product on UPS trailers ready to be picked up. We got a call from the USDA stating that they had put us through the wrong process and we would have to start over again. We had to pull all of the outbound orders and go back into a holding pattern. At this point we are moving through the process but have no idea when we'll be back in business with the canned eggs. It is a frustrating situation with one of our best sellers and we apologize for the delay. Just as soon as we have product ready to ship we will send out an email to all of our great Honeyville Customers. We appreciate your patience."

Kefir - I only use powdered milk products - period. I don't purchase store-bought milk. We use a whey-based milk substitute - Morning Moo's - for drinking and cooking. I store another brand, Country Cream, and use it for my kefir - http://www.grandmascountryfoods.com/. The Country Cream seems to work better than the whey-based product for kefir, unfortunately it's more expensive than Morning Moo's. I've never tried it with store-brand powdered milk. If you do let me know how it works - just out of curiosity. I've made it with fresh goat milk, but I don't have a source for it anymore.

Do you know you can place your grains in a jar of milk and "rest" them in the refrigerator (for 7-10-days, or so)? I usually keep 1/3 to 1/2-cup of grains going, and place mine in 1-cup of milk in a pint jar and rest them for 5-7-days before making kefir. I usually have 4-6 cups of kefir in the refrigerator at any one time, and when I get that much I'll rest my grains until I need to make more.

When I want to use them again I'll remove the grains from the milk and place them in 2 to 2-1/2-cups of milk in a quart jar. You can leave the pint jar of milk the grains were resting in sitting out at room temperature and it will have enough kefir in from the grains to ferment into kefir.

My new favorite... I make kefir using coconut milk. I use coconut milk powder (reconstituted) but you can use canned coconut milk. You might try it when your grains get bigger and you need to divide them and have some extra grains. Once I used them in coconut milk, I store them in coconut milk and only use them with coconut milk. We love it added to pineapple/orange juice smoothie for a great pina colada taste - or just plain instead of yogurt, or topped with homemade granola.

I use kefir as a replacement for buttermilk, and I use it in my bread. I never thought about it rising better because of it. But then, that's what I've always used in my bread recipe ;-)

Carol- You can make naturally-fermented bread with kefir - no sourdough starter necessary (you'll find a recipe at the link below. Maybe use half kefir and half warm water. It will help tenderize the crumb. Check the recipes for using kefir at the link below for more choices for you. I just finished fermenting a quart of kefir today and one yesterday so I was looking at these recipes for some inspiration. Before going gluten-free, I nearly always used a 100% extraction - medium-fine grind (Nutrimill) for bread. I used an overnight sponge, which softens the bran, for making 100% whole wheat flour yeast bread. That is another way to lighten the loaf. Using a soaked flour method (Sue Gregg or "Nourishing Traditions") is another method to lighten the loaves because it softens the bran. Tempering the grain before milling, as well as bolting the flour, is yet one more method. The only tempered wheat I've worked with was called "heavy-bran" (from a local stone mill), and it was more like oatmeal. I developed several recipes for the mill with this product, but they decided not to continue production due to expense and hassle. I would sift the bran from flour milled for making "cake" flour (a 3:1 mix of soft white wheat and whole oat groats OR spelt), although softer wheat doesn't bolt as efficiently as hard wheat. I don't own a standard flour "sifter", but I use a series of food-grade mesh sieves I've collected over the years for bolting. I'm not even sure of the micron size of them. You can get sets that have 3 (or more) sizes to the set. Start with a large one and continue with smaller ones until you have achieved the extraction rate and particle size you'd like. If you make your own cereal or cereal blends for making cooked cereal (Cream of Wheat, Rice, Barley, Rye, 5-grain, 7-grain, etc.), that's another place you will want to sift the finer particles from the mixture before cooking it. If you don't sift it out, you will end up with "glue" for cooked cereal. Same thing if you make cracked wheat or bulgur. It is my understanding that flour is generally in the range of 35-70 micron opening mesh. Naturally, it depends on the grind from your mill. If you start with a coarse grind, you will get different results than if you mill your grain on a medium or fine grind. You will get a finer grind on many mills if you run the grain through on a coarse grind, then run the coarse flour through on a finer grind a second time. Yet one more option. I'm not sure what the sizes are for the various grinds of corn, but I might have something in my files and will post it if I find it. The finer the cornmeal -- the texture of the cornbread will be more cake-like. This would be the "coarse" setting used for milling cornmeal on the Nutrimill. You can't get a true coarse grind using an impact mill. I use a Corn Mill - steel burrs - for coarse grinding. Coarse cornmeal will be coarse and heavy when used for cornbread. I have three steam cleaners purchased over the years, and one was a gift. I use them to avoid toxic chemicals because they cause me breathing problems. Once you get accustomed to cleaning with steam, you'll find it a really quick solution. No more buckets of nasty mop water to deal with. If you have small children, you can use the steam cleaners to sanitize their toys. Shark - canister unit with lots of attachments. We save this for big jobs and use two people - one person to control/move/hold the canister, and the other person to use the nozzle end. Great for steam-cleaning windows, beds, cloth surfaces on furniture, drapes, rugs/carpets. You can steam clothes and get wrinkles out without having to iron them. Shark Steam Pocket Mop. Quick and easy floor cleaner. GE Household Steam Cleaner (gift) - small, hand-held This one is easy to use with an assortment of cleaning accessories that comes with it. It has a handy shoulder strap so you have 2 hands free. Great for bathrooms and hard-to-reach places. You can use this steamer on upholstery, windows/glass/mirrors (a steam window squeegee is included), hard surfaces, toilet, shower, tile/grout, sinks and faucets. I have been using these units for 8-12 years. Helpful hints: -I use a cloth towel to mop of any wet corners, or drips. -ALWAYS use distilled water in the units to keep them from plugging from minerals in regular tap water. Using hard water will shorten the life of your steam cleaner. -Never use steam to clean unfinished wood. It will open and raise the wood grain. Check with any manufacturer of flooring before using a steam cleaning on the surface - especially if it is still under warranty. -Read the use and care instructions of any steam cleaner before purchasing it (most are available on-line). See if there are any videos available on-line so you can see how they can be used. -Get a couple extra mop cleaning pads. These microfiber cleaning pads need special care like you would any microfiber towel. The manufacturer change the models often enough, at some point you might not be able to find more mops. I have made some of my own mop cleaning pads with terry cloth. Do your homework. These were the brands available locally, and the only ones I have used, so I can't speak to other brands. I just know they clean very well and I don't have to wear a breathing mask to avoid the chemical fumes to clean my home. :-) -Grainlady

We've been adding shelves like crazy and putting the tax refund to good use. 1. Chia seeds. I use an awful lot of them and keep 5-10 pounds of chia seeds in storage. That's more then enough for a year. 2. Brown rice. Store it vacuum-sealed in the freezer and keep rotating it in and out of storage. Augason Farms has #10 cans of hermetically sealed Long Grain Brown Rice - http://www.augasonfarms.com/. Not sure about the shelf life (probably 5-10 years). Give Augason Farms a call for that information (1-800-878-0099). I understand you can order it and get it dropped-shipped to your Sam's Club now. I've ordered from Augason Farms (formerly Blue Chip Group) for over 20-years. I've been using their Morning Moo's Whey Based Milk Substitute as our main source of "milk" for over 20-years. 3. Brown sugar is great for home food storage, just don't vacuum-seal it. The potential for botulism growing into a toxin in the oxygen-free storage is the problem. You can opt to make your own with white sugar (which has an indefinite shelf-life) and molasses: 1# granulated sugar + 3-ounces (by weight, not liquid measure) molasses. Process about 1-minute in a food processor. 4. Oklahoma and western Kansas are both in drought conditions, so I only see wheat prices going up. I'm paying $12.68/25# for Wheat Montana Prairie Gold at Wal-Mart. I added 75-pounds more last week. BTW - You can use that same dough for making cinnamon rolls, sandwich buns, hamburger or hot dog buns and dinner rolls..... When I make sticky pecan rolls I put about 1 T. agave nectar (just enough to barely cover the bottom of the muffin tin cup). You could also use honey. Just don't get too generous or it will spill out of the muffin cup and mess your oven up during baking. Cover the agave nectar (or honey) with chopped pecans. Put your cut cinnamon rolls on top, cover with plastic wrap, and allow to rise. Bake as usual. When you take them out of the oven, flip the muffin pan/s out onto a baking sheet covered with parchment paper. -Grainlady
