Where to get frozen butternut squash?

Hi all,

I have a recipe that calls for butternut squash. I used to buy it frozen all the time, but now I can't find it anywhere. I suppose I could substitute pumpkin?? or cook my own. Have any of you seen it anywhere? Thanks.

It's so easy to cook your own it's not worth running from one store to another. Just put a chunk of butternut into a covered dish with about 1/2 inch of water in the bottom and micro wave on high for about 4 minutes or more ( depending on the power of your micro) until it's very tender and soft, drain water off and mash.

Catherinet, are you near a large city? I can't get it in this small town either and I really hate peeling and slicing a butternut squash.

I was browsing at the burpee website, and burpee seeds are what my local stores sell. Anyways, I was looking at the butternut squash seeds for next year, and I see their Waltham Butternut Squash claim to be 24" long. I am a bit skeptical of this, and wonder how long are the vines in reality. I plan to grow butternuts on a trellis, and am looking for a variety that tastes great, but isn't going to outgrow a trellis. My trellis will be steel, so no support issues, and I can fabricate it to any height I'd like, but I prefer not to have a 10 foot trellis that I can't reach to the top. I currently have two 6 foot trellises, and hope I could even use one of those. So, with all that mumble jumble out of the way, what can I REALLY expect from a butternut squash vine? I hear that Waltham is the best, and would prefer the best of the best. Joe

Since we're on the topic of squash, I'm going to (pardon me please) do a mini hijack. I'm growing pie pumpkins and Table Queen acorn squash. I've NEVER had one grow! I get tons of gorgeous, dish sized blooms, then nothing. SO, I'm assuming it's a pollination issue?? I've decided to hand pollinate in case that's the problem but I see that squash have worms..ugh. Well, figs have wasps, lol. So, if I actually coax a squash out, should I put it in a nylon stocking? I buy them all the time for tying plants, so I have several. I'd planned on trellising anything that vines in my southern raised bed because it'll stop getting enough sun by Dec. I use the stockings as slings for any fruits that need them. I love squash, but I'm the only one that eats them, so I'm only planting a few but would hate to lose the one's I do get. I'm in Central Fl, just north of Orlando...any suggestions as I undertake my first winter squash venture?

Great looking soup Bobby! Love the pictorial. I always thought my butternut squash soup was good until I tried my SIL's. She adds curry. Clive thinks he hates curry so I never would have done that but he gobbled up the soup and said it was the best he ever had. I made my SIL promise never to tell him about the curry.... ;)

Butternut Squash Lasagna Recipe courtesy Giada De Laurentiis Posted by LoriJean Recipe Summary Difficulty: Medium Prep Time: 30 minutes Inactive Prep Time: 15 minutes Cook Time: 1 hour 25 minutes Yield: 8 to 10 servings User Rating: Cook's Note: The no-boil lasagna noodles can be substituted with fresh spinach lasagna sheets. Look for fresh lasagna sheets in the refrigerated section of specialty markets. 1 tablespoon olive oil 1 (1 1/2 to 2-pound) butternut squash, peeled, seeded, and cut into 1-inch cubes Salt and freshly ground black pepper 1/2 cup water 3 amaretti cookies, crumbled 1/4 cup butter 1/4 cup all-purpose flour 3 1/2 cups whole milk Pinch nutmeg 3/4 cup (lightly packed) fresh basil leaves 12 no-boil lasagna noodles 2 1/2 cups shredded whole-milk mozzarella cheese 1/3 cup grated Parmesan Heat the oil in a heavy large skillet over medium-high heat. Add the squash and toss to coat. Sprinkle with salt and pepper. Pour the water into the skillet and then cover and simmer over medium heat until the squash is tender, stirring occasionally, about 20 minutes. Cool slightly and then transfer the squash to a food processor. Add the amaretti cookies and blend until smooth. Season the squash puree, to taste, with more salt and pepper. Melt the butter in a heavy medium-size saucepan over medium heat. Add the flour and whisk for 1 minute. Gradually whisk in the milk. Bring to a boil over medium-high heat. Reduce the heat to medium and simmer until the sauce thickens slightly, whisking often, about 5 minutes. Whisk in the nutmeg. Cool slightly. Transfer half of the sauce to a blender*. Add the basil and blend until smooth. Return the basil sauce to the sauce in the pan and stir to blend. Season the sauce with salt and pepper, to taste. Position the rack in the center of the oven and preheat to 375 degrees F. Lightly butter a 13 by 9 by 2-inch glass baking dish. Spread 3/4 cup of the sauce over the prepared baking dish. Arrange 3 lasagna noodles on the bottom of the pan. Spread 1/3 of the squash puree over the noodles. Sprinkle with 1/2 cup of mozzarella cheese. Drizzle 1/2 cup of sauce over the noodles. Repeat layering 3 more times. Tightly cover the baking dish with foil and bake the lasagna for 40 minutes. Sprinkle the remaining mozzarella and Parmesan cheeses over the lasagna. Continue baking uncovered until the sauce bubbles and the top is golden, 15 minutes longer. Let the lasagna stand for 15 minutes before serving. *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

Yes, My shopping has been in a large midwestern town. That's why I don't understand. I guess I'll try some places like Meiers. I tried Kroger's, Payless, and Marsh.
And they don't always carry the actual squash either.
Do you think I could substitute pumpkin? I think squash is a little sweeter and lighter, but I'm thinking pumpkin would do.
If I can't find any frozen, I guess I'll have to grow it myself next year! I used to grow it and freeze it in ice cube trays for my kids when they were babies. They loved it.

Birdseye has cooked winter squash and most of the grocery stores here in Baltimore sell their own house brand of cooked winter squash, too. I know it takes some searching amongst the frozen foods to find it. I think they stock very little so there may only be a few boxes of it hidden away. I've sometimes had to look at the shelf tags to find it behind something else.

Meijers carries frozen butternut squash, as does Jewel (I just bought some for a soup recipe). The Meijer squash is organic and a bit pricier. If you have a Trader Joes near you, they often have cubed butternut and or acorn squash that you can easily cook and mash. I make one or the other once a week.

In San Francisco the Rainbow Grocery definitely sells frozen butternut squash. Trader Joes's said they did not.

Publix doesn't carry it here! As much as I love Publix I have to say their frozen veggie section leaves a lot to be desired here.

Thanks everyone,
I still haven't found it yet, but haven't been able to get to Meijer's or Walmart. The ones with grocery stores are pretty far from here.
I've decided to grow it myself in the garden next year.
I can't believe Kroger and Marsh don't carry it. Maybe its too old fashioned a taste?? Its a great source of vitamin A.

Just so everyone knows, canned "pumpkin" is mostly canned butternut squash. The FDA has no legal definition of "pumpkin," and food processors use butternut because it is the richest, most dense, deepest orange, and least fibrous of all of the squash/pumpkin type things. I have read that they often use a variety of butternut called "Argonaut." So, feel free to use canned pumpkin in any butternut squash recipe.

That being said, I hope I'm actually correct in relaying this information. I recall reading this a few years ago. I actually grow my own butternuts every year, and store them in my basement. Often, they keep until well into the following summer. I personally find it extremely simple to cut one in half and nuke it until it's ready to scrape from the shell.

I'm in the Midwest, too, (MI) and have not been able to find frozen squash at any of my grocery stores - Walmart, Meijer, Kroger, even a local mom/pop store. I have been looking since winter, and it's now spring but still no frozen squash on the shelves.

That's just so...typical. They define some things to the nth degree and others they can't even be bothered define at all.

When I lived in the ohio valley, Meijer had it. Here I've seen it at Trader Joes and Whole Foods and Raleys.
