My poultry guy at the farmer's market told me that some chickens (breeds of chickens? specially raised chickens? -- I don't know) always lay double-yolk eggs. He can charge higher prices for some of his eggs because he can guarantee double yolks. People around here like them, I guess because you're only eating one big fried egg but it seems like you're eating two. So somehow you got eggs laid by the double-yolking chickens.

I ran across this method for hard cooked eggs from Julia Child. Please read #5. WHO KNEW! -Grainlady Perfectly Easy-to-Peel Hard Boiled Eggs 1. Start by placing your eggs in the bottom of a large pot. You want the pot to be large enough that the eggs can fit in a single layer. Add water until it's 1 inch above the top of the eggs. 2. Turn on the heat and bring the water to a boil. (If you want, you can add a half teaspoon of salt here like Katie suggests.) 3. When the water boils, cover the pot and turn the burner off. Let the eggs sit in the covered pot for 17 minutes. Get a bowl filled with ice water and set it off to the side. 4. After 17 minutes, transfer the eggs into the ice water using a slotted spoon. 5. Now, bring the water back up to a boil again and place the cooled eggs into the boiling water for just 10-20 seconds more. Cooling the egg causes the egg itself to shrink away from the shell and membrane, and when we give the outer shell that extra blast of heat, it causes it to expand slightly, pulling it as far away from the egg as possible. Real nice looking deviled eggs Donna L. I did unpack my deviled egg plate and it holds 12 plus room for a few more in the center. That is enough for our meal, that way I won't have a lot of them left. I too have the plastic lidded ones and they are good to store or take eggs in. Two Rubbermaid ones and one Tupperware one. I also have several different glass ones and do use those for other meals. I use either Miracle Whip or Mayo in mine plus, some sugar, and some mustard. Not a lot of any of it. Some times I like to boil more eggs than I need and use the extra yolks so they will be nice and full and of course paprika on the top. Then I just eat the egg whites that are left over :) Sue

Cooking hard-boiled eggs. First, it's better not to use fresh eggs. Second, put them in a pot of cold water in a single layer, bring to boil, cover and remove from heat. Let sit 16 minutes, drain water, cover with cold water, drain, put lid back on pot and shake pot vigorously,cracking the shells. Peels should come off easily. If you find the vacuum spot on the egg, often you can get under that membrane and the shell will come off in one piece.
