oh oh Used bread flour in upside down cake

This is my mom's Pineapple Upside Down Cake

Charlottes Pineapple Upside Down Cake

1/3 c. butter 1 c. sugar

1 egg 1 3/4 c. flour

1/2 c. milk 3 t. baking powder


1/4 t. salt 1 t. vanilla

Make as cake batter. Line pan with 3T. butter and 3/4 c. brown sugar. Cream them, then add the pineapple, pour on the batter. Bake 40 minutes at 375�.

*NOTE* Charlotte always baked this in a cast iron skillet

own Cake. ***NOTE*** That should really be 1/3 c butter + 3 T. butter. The 3T butter gets creamed with the 3/4 c. brown sugar in the skillet!

I almost didn't use enough butter. I got to thinking about it being an OLD recipe and that it might not have specified. I called mom and asked. Luckily she remembered what it should be.

I made it ONCE years ago, barely remember doing it. A friend is having a picnic tomorrow evening, and I decided to spoil my parents, & DH who love it. Mom hasn't made it in years. I goofed and used bread flour instead of all purpose. Will I be ok? It's out of the oven already and cooling. Pictures when it's cooled and plated when I have time. I still haven't started supper!
